Baked Ziti III

We loved this! The sour cream gives it a nice twist. I used ground turkey instead of beef. I also used sliced Havarti for the first cheese layer and shredded three-cheese blend for the top layer (because I didn't have what the recipe called for). Anyway, totally fab and we'll definitely make it again.

Orange Whole Wheat Pancakes

I made these pancakes this morning. I thought I would be feed my 19-month-old and myself, so I made half a batch. We gobbled those up in about five minutes. So when my husband took a bite and decided he needed "second breakfast," I made an additional full recipe. There are none left. So, for two and a half people to eat 12 servings, you learn two things: (1) they are really, really, really good, and (2) the recipe runs small, so if you're using the pancakes as the entire meal - no eggs and such - consider that the recipe really feeds two foodie adults, not eight. I made the recipe exactly, but topped it with apricot syrup rather than marmalade. They are heavy and light at the same time, buttery smooth, tender, moist and irresistible. I suppose you could substitute any type of juice and matching topping to vary it ... acai berry juice with blueberry syrup, apple juice with apple syrup ...

Easy Meatloaf

I sauteed the onions first because I hate crunchy things in dishes that aren't supposed to crunch (meatloaf, deviled eggs, tuna salad, etc.). I added a teaspoon or so of Worcestershire, a handful of grated cheddar cheese, and a pinch of dry mustard to the meat mixture. But it would've been delightful without my alterations. So, five stars. I'm stuffed!

Spring Strawberry Spinach Salad

My husband and I loved this, even though I forgot to add the salt. He's picky about dressing, and said, "It's great! It's not overwhelming, not underwhelming. It's just the perfect amount of whelm!" I used half olive oil, half vegetable oil, probably 3/4 cup total, and only 1/3 cup sugar. Everything else in the recipe's amounts.

Linda's Lasagna

Great recipe, and very easy. I used beef breakfast sausage instead of ground beef (because that's all I had). The only problem with the result was my own fault; my toddler dumped out my garlic powder and I only had garlic salt, so I used that, but it was too much salt. Ooops. Still delightful, in spite of my judgment error. I also added chopped spinach to the sauce mixture, which was wonderful. Can't wait to try the recipe again with the right amount of spices!

Light Oat Bread

I love dense bread, so this one is perfect for me. I used a really old bread machine, which hadn't been used in a few years, so I don't know if that contributed to the denseness or not. Regardless, I LOVE it.

Chicken Thigh Fricassee with Mushrooms and Rosemary

YUM. Love this. The only thing I did different was to slice the olives and tomatoes so that I could have a bit with each bite and add maybe a teaspoon of fresh thyme that I had in an herb pot. I used boneless/skinless thighs and they are fall apart tender.

Strawberry Muffins

Yum! Hubby and I have eaten three each already, and they've been out of the oven all of 15 minutes. Next time, to make them healthier, I'll use half whole wheat flour. I also added about 1/4 cup Benefiber (the powdered fiber supplement). I substituted for 1/2 cup applesauce and about 1/4 cup flax oil for the oil in the original recipe, just for good health (I figured the oil would offset the additional dry ingredients created by the Benefiber). I didn't have any buttermilk, so I used milk, which worked fine. I don't really like nutmeg and didn't have any anyway, so I just left it out. All around, a fantastic muffin. Oh, and I used homemade fresh strawberry jam, which I made by accident last night after a cobbler fiasco. A delightful way to recycle!

Rempel Family Meatloaf

We really liked the flavor of this, but I prefer the texture of fresh onions over the dried soup kind. I liked that it doesn't have a topping, so you can flavor as desired after the fact (most ketchup/brown sugar tops are too sweet for me).

Mini Meatloaves

Hubby LOVED these. I can't fathom meatloaf without onion, so I added half of a large, finely-chopped, sauteed onion. I also prefer a less sweet topping, so I cut down on the brown sugar. But that's just me. Great recipe!
