Broiled & Slow-Roasted Butterflied Leg of Lamb With Cumin and Garlic

Absolutely delicious! I was fearful that the rub was going to be too salty, but I followed the recipe exactly. Since my roast was smaller, I used only half of the rub. I cooked to 145 degrees, and it was perfect! We will definitely be making this again.

Marinated Flank Steak

Delicious! I followed an earlier recommendation and substituted balsamic vinegar for the red wine vinegar. I broiled for about 8 minutes on each side, and it was perfect!

Lemon Zucchini Bread

Terrific! I doubled the batter to make two loaves. I made a few additions - used half brown sugar and half granulated, and added vanilla extract and lemon juice. In addition, I basted the cooling loaves with the glaze that Naples suggested. It is absolutely delicious!

Flourless Peanut Butter Cookies

Great recipe in a pinch! I rolled the dough into small balls, dipped the tops in sugar, and used the tines of a fork to flatten each. They took a few minutes longer than what is stated in the recipe. A single recipe made about 45 small cookies, which was perfect.

Microwave Oven Peanut Brittle

Amazing and couldn't be easier! I have a 1000 watt microwave, so I cooked the sugar and corn syrup for 4 minutes, added the butter, vanilla and peanuts and cooked for 2 minutes, then added the baking soda. I can't wait to make this again!

Corned Beef and Cabbage

I followed the directions exactly, with the exception of adding only a small amount of cabbage. This was a big hit! The flavor was absolutely delicious. I cooked this on low for approximately 10-12 hours. I will definitely make this again!

Beef Tenderloin With Roasted Shallots

I served this on Christmas Eve, and my family loved it! The sauce was amazing, and the meat was fork-tender. I cooked it to a higher temperature and the meat was still a little too pink for me, so we put a few slices back in the oven for a few minutes to cook through. Delicious!

Cinnamon Sugar Crisps

These are easy and very tasty! I tried another variation - brush with melted butter and shake on a mixture of grated parmesan cheese, minced garlic (from the jar) and a bit of cayenne pepper. This was savory and would be good in place of crackers.
