Pasta Primavera with Smoked Gouda

We thought this was great! I'm not a big pasta person, but the veggies really brought this dish to life as did the smoked gouda. This will be on regular rotation at our house, what a great healthy recipe. Next time I think we'll add chicken just for a different spin.

Chicken Pot Pie IX

OMG! This recipe if fantastic! I was going to make one of the quick pot pies listed here, but decided since my chicken was already cooked and all I had to do was put the vegetable bag in the microwave to heat, that I probably had time to make the gravy from scratch. I am so glad I did! It was awesome, one of the best dishes I've made since I've started cooking! Hubby said he could eat it forever, which is a pretty good compliment if you ask me. Thanks Robbie for the recipe, we love it! This is a recipe to hand down to future generations....only thing that I changed in the recipe was omitting the celery and celery seed, just didn't have it on hand.

Slow-Cooker Chicken Tortilla Soup

This soup is amazing! I love how I can just dump it in the crock pot and be done with it. Made a couple of changes just based on what I had in the cabinets. Used Rotel tomatoes instead of whole peeled tomatoes and used taco sauce instead of enchilada sauce, otherwise I made it exactly as stated. When done I topped it with mozzarella cheese...DELICIOUS! Hubby absolutely loved and devoured the leftovers the following days...he even added pico de gallo for a little extra kick.

Tomato Bacon Grilled Cheese

I knew this would be a great combination, how do you go wrong with cheese, bacon, and tomato? My hubby on the other hand had his reservations, so I held on to this recipe for over 2 months waiting to use it with his permission ;) Well that never happened and I sprang it on him last Monday, a day I was really looking to prepare something fairly simple and quick. I made a couple of these and a couple of regular grilled cheese sandwiches.....I hardly got to have one! My hubby LOVED them! He's not even a fan of tomatoes but said it wasn't a complete sandwich without it! I was quite surprised! This will be added to our "need something quick and easy" recipe collection! Thanks Missy!

Mini Pineapple Upside-Down Cakes

Love these cute little cakes! I'm not a big fan of actual pineapple but love the flavoring, so I used a little crushed pineapple as topping and also used pineapple cake mix as suggested by pps. They turned out great! Thanks for a great recipe!

Pumpkin Pancakes

I don't particularly care for pumpkin, but my picky 20 mon old toddler loves it, so I'm basing this review/rating on his reaction....and he LOVED them! He ate 4 pancakes! I accidently messed up the order of ingredients (separate bowls etc, what can I say it was 6:30am on a Saturday..lol) but they still turned out great. Freezing the rest of the batch of a quick breakfast on a weekday morning. Awesome recipe!

Garlic-Lime Chicken

Great recipe! I usually have my doubts about marinating chicken breast b/c I never can seem to taste the flavor...but this recipe is great! I marinated my chicken breasts for about 4 hours. When I got home from work I put them in the oven for about 50 minutes and they came out great! Added cilantro as suggested in a previous review and am using leftovers in Chicken Enchiladas tonight! Thanks for a great recipe!

Easy Enchiladas

I thought my hubby was going to keel over he ate so much :-) He absolutely LOVED this! I enjoyed it, but not as much as he did...think I might try it with chicken next time. It is a very easy dish that we'll put on regular rotation! I also added a can of drained rotel tomatoes. Fabulous!

Man's Way Sausage

This was pretty good! We had it for dinner last night...seemed a bit like overkill for potatoes and sausage when they probably would have been just as good in the skillet (than in the oven). I added onions and garlic, which according to hubby he's not very fond of with eggs and potato...which was news to me :-) But even with my additions, he ate most of it and heated the leftovers up for breakfast! I topped mine with salsa and cheese and ate with tortillas, hubby topped his with Three Chili Dry Roasted Salsa (recipe on this site) and ate with tortillas.

BBQ Chicken Calzones

I'm not sure I cared for this much....Made exactly as written. I seem to be in the minority on this recipe, so I'm sure it's just my personal preferences. DH liked it but wasn't impressed and munchkin ate some of it.

Bean Burrito Casserole

I love this recipe! What's wrong with having an easy dinner to pull together on one of those nights when you don't feel like cooking? I think this is a great recipe! We changed most of the recipe to suit our taste buds (we LOVE cheese), so instead of cream of mushroom, I used cheddar cheese soup, put the sour cream on the side, added drained rotel tomatoes, cilantro, and onions to the cheddar cheese soup. We changed it up quite a bit, but that's what I love about this recipe, you start with a base (burritos) and you can customize it to suit your tastes. Loved this recipe, will definitely have the ingredients on hand in the event of a "dinner emergency" ;-)

Tomato Enchilada Bake

Hubby and I LOVED this recipe! I used Rotel's Mexican Tomatoes (included lemon and cilantro), drained in place of the diced tomatoes. I think next time I'll leave the sour cream on the side, but that's just my personal preference, I really don't like sour cream. This will be on regular rotation at our house.

Potato and Bean Enchiladas

My hubby LOVED these! He was hesitant to try them and was kind of grumbling that he wasn't getting any meat for dinner, but the moment he took a bite he raved about them! Instead of using the salsa verde from this recipe, I used the Three Chile Dry Roasted Salsa recipe from this site (just experimenting). For me, BIG mistake...for hubby, he LOVED. Turned out way too spicy for me, so next time I'm going to use the salsa verde on this recipe so that I can eat dinner too...LOL! I will definitely be trying this one again!

Three Chile Dry Roasted Tomatillo Salsa

OMG! We have hit the jackpot with this recipe! My DH has been trying to recreate the authentic mexican salsa that his step-mother makes for years, with no success. I think we have finally figured out how to make it!! He loves it! I think the key part of the recipe is heating up the salsa to get rid of the raw flavors of the peppers and tomatoes. I even made red salsa using roma tomatoes instead of tomatilloes and it came out great! My DH put it on EVERYTHING and has requested that we have this salsa on hand at all times :-)

Sloppy Dogs

Hubby nor I are a big fan of sloppy joes anymore having eaten them most of our childhood, but I saw this recipe and decided to give it a shot. OMG! I absolutely LOVED these. Hubby was still kind of leary, but to me it gave the sloppy joes a whole different taste. The onions are a must! This will be on regular rotation in our family!

Mouse's Macaroni and Cheese

OMG! This recipe is awesome! So simple and delicious. I made this for our yearly Christmas party with friends and they devoured it! I don't even normally like homemade macaroni and cheese..what can I say I like my Kraft Macaroni and Cheese, but this recipe is a keeper! I substituted colby/monterrey shredded cheese for the american and it still came out great!

Lemonade Cake III

My grandmother used to make this cake for us when we were little. I think it is absolutely, by far, my favorite cake ever! We use yellow cake mix instead of lemon cake mix and it it still very lemony, sweet. We also use confectioner's sugar instead of granulated sugar for the icing. I LOVE, I LOVE, I LOVE this cake!

Lemon Mustard Chicken

Hubby liked this recipe, I'm not sure it's my "cup of tea". Funny, I read the reviews saying too lemony and my complaint is that I couldn't taste the lemon. I'm not giving up on this recipe though, I think I might marinate the chicken with the lemon and mustard for a couple of hours next time and see if that improves the lemon flavor for me. Otherwise, hubby enjoyed it, he said he could taste the lemon, so maybe it's just me.

Fry Bread Tacos II

These were great! I didn't have the beans, so we did without, but next time I'll be sure to add them, as I think it would have "held" the taco meat on the fry bread. I was having some trouble keeping the meat on the bread without it :-) We really enjoyed this, it was definitely a nice change of pace, however I think we might do this on recipe on a less frequent basis b/c of the heaviness of the bread and the frying. But we'll definitely keep this recipe for future use!
