Potato and Cheese Frittata
Great tips from the others. I diced the potatoes, fried it, mixed it with fried onions, garlic and leek. Sprinkled chopped tomatoes, spring onions and fried bacon on top. Poured in the beaten eggs (white and yolks beaten separately). Served it with fruit. Excellent !

Oven-Barbecued Pork Chops
I used a cast iron casserole pot over the stove, doubled the sauce, left out the chilli, added honey as suggested by the others, added onions and garlic. Cooked it for about 45 mins covered and left it to simmer uncovered for an hour. The result was meat falling off the bone, tender and moist. Great with mash potatoes. Hubby and girls (3 and 6) lapped it up.

After reading the reviews, I just had to make this dish for Christmas eve dinner. I used canned clams and crab, frozen scallops and prawns and a mixture of fresh fish, added potatoes and carrots (not too much, just enough to thicken it), cayenne pepper and chillie flakes as the others had suggested. It was fantastic. Everyone loved it :-)
