Decadent Pumpkin Muffins
Great recipe. I did make changes as other reviewers mentioned. I used 4 whole eggs, no water. I also made my own changes by using1-1/2 cups of AP flour, 1 cup whle wheat flour, 1 cup oats. Also instead of all the sugar I used only 1 cup honey which I wil reduce even further next time. Everyone loved them for breakfast.

Pumpkin Pancakes
These pancakes are fantastic. I've been making the original recipe for quite some time but switched it up today. For the flour I used 1c. AP flour, 1/2c. whole wheat flour, 1/2c. oats, applesauce for the oil and lemon juice for the vinegar. Let the batter sit for 15 minutes before cooking, still incredibly yummy. I make extra batches to freeze to have on hand for a quick breakfast. Thanks for a great recipe!!

Baked Pesto Chicken
Wonderful recipe!! Marinated in a homemade pesto made with almonds for about an hour. Followed the recipe except for the tomatoes. I only had cherry tomatoes so I made a warm relish with them and added them as per the recipe. Exteremely quick and tasty recipe. This will become a main staple in our house.
