Zucchini Beef Bake
My husband and I really enjoyed this. I made a few small changes...doubled the garlic and cheese, and if you keep the layers of zucchini under the meat mixture, there is no need to precook it. We will definitly have this again!

Lower Fat Banana Bread II
This was surprisingly good. I used 4 small bananas. To cut calories a bit more, I used 1/3 cup of sugar and 1/3 cup of Splenda. As suggested by others, I added spices... 1 t. cinnamon, 1/8 t. ginger, and 1/8 t. nutmeg. My family and guests enjoyed it without knowing it was 'dietized'. As a personal preference I also left out the walnuts.

Pumpkin Cake II
This was a moist cake and I will make it again, but I will use a full 15 oz. can of pumpkin. Some people were asking what kind of flavored cake it was.
