Best Guacamole
This is the best guacamole I ever ate, but I did change it up some: I minced garlic, onion, fresh cilantro, half a tomato, and a seeded jalapeno and mixed it in. I thought lime juice would work better than lemon, but I didn't have a lime--good thing, too, the lemon was just right.

Cream of Fresh Asparagus Soup I
Made this last night--very good! Put in 2/3s the milk and used chicken stock instead of water and left out the tamari... yum! Ate it with ciabatta bread. I bet a little parmesan on top would have been good--isn't it always?

Enchilada Stack
This was great! Plenty for two servings and one lunch to take to work. I added some seasoning salt, and I ran out of cheddar, so I supplemented with jack cheese. I didn't realize it's a microwave recipe. I baked it for 20 minutes. My husband dabbed sour cream and salsa on the top, and if I'd had an avocado, I bet a few slices would have been good with it. This one goes in the permanent collection.
