I'm a working wife and mother. I just finished graduate school and so I hope to dedicate much more time to my love of cooking.
My favorite things to cook
I enjoy cooking good, comforting, and delicious foods. However, I also enjoy being kind of adventourous. I love making casseroles, different kinds of quiche and anything with curry!
My favorite family cooking traditions
To cook really good, simple food. It's the love that we put into our cooking that counts, not any fancy-schmanzy ingredients.
My cooking triumphs
My family loves my King Ranch chicken, banana pudding, holiday pies, baked from scratch chocolate cake with cheese cream filling, and all kinds of vegetable and pasta salads.
My cooking tragedies
Chicken and rice casseroles simply don't work for me :( And as ironic as it may seem, my Tex-Mex dishes are really lacking!

Too Much Chocolate Cake
This is an excellent recipe for basic chocolate cake. I've made it several times as per the original instructions and it's come out very moist and delicious every time. I covered it with a chocolate ganache recipe from this site. Today I am making a 4 layer cake with peanut butter frosting in between the layers of the chocolate cake and then covering with chocolate frosting from the Hershey's Dutch Chocolate tin. Great go-to recipe for chocolate cake. Never fails to impress.

Awesome Ham Pasta Salad
I love this recipe. It makes for the tastiest pasta salad. Few changes: I don't like onion so I leave it out, I only use red bell pepper, and I add 1 bag of frozen peas and cubed cheddar cheese. It tastes awesome. I make it for work get together and pot-lucks, family gatherings, etc... and everyone eats it up!

Black Bean And Corn Salad II
I love this recipe! I make it all summer long when we cook out. I don't add garlic or onions and I add a can of chick peas along with the black beans, sometimes butter beans-canned. I always add extra lime juice and cilantro and let it sit over night so the flavors come together. I add the avocado right before serving.
