About this Cook
I have been married for 23 years, I have 8 children of my own and 2 stepchildren that I raised from the ages of 4 and 6. I do all the cooking in our home, not because my wife can't cook, but because she doesn't enjoy it and I love to cook. I like to try out new recipes and have plenty of judges to try them out on.
My favorite things to cook
I like to just about anything but I like Cajun, Italian, Mexican and Southern Home Style. I like spicy food and spice up just about everything I cook.
My favorite family cooking traditions
Every year we have a huge crawfish boil in the spring cooking from 200 to 300 pounds of crawfish with all the trimmings. I have my own recipe and method for cooking crawfish and am always in charge of cooking for this get together.
My cooking triumphs
Taking 1st place in a chili cook off with 200 other cooks and placing in the last 3 bar-b-que cook offs.
My cooking tragedies
Cooking shrimp etouffee for 30 people at one of our campouts and the rice would not get done. No amount of extra cooking would make it right. So we ate etouffee on rice that wouldn't cook. I always did all the cooking on Saturday when we camped out, so everyone knew it was a fluke, but it was still embarrassing.

Blackberry Cobbler
My grandmother used to make a cobbler similar to this one. I tried to make one like hers ever since she passed away. I tried this one and it was so close to hers. The only change I made was the crust because I like a thinner more crunchy crust. I used the non-rising crust I use in my peach cobbler, it also holds together better when you roll it up. Thank you for this recipe it was fantastic.

Mock Lobster
I marinated the chicken over night and then grilled it and the consistency was amazingly like lobster. my family loved it and I will make this again.

Midwestern Pork Tenderloin Sandwich
I moved back to Texas from Kansas 30 years ago. I can't tell you how many times I've tried to duplicate the fried pork sandwiches we used to get there. I could never quite get them right. I thought they were made with pork steaks so I was off there. I'm so glad to find this recipe, I can't wait to tell my brother. Thank you so much for this recipe!!!
