Award Winning Soft Chocolate Chip Cookies

I'll give this five stars because we really did love these cookies. I used a pumpkin pudding mix and it gave the cookies a great flavor. My only complaint is that after a day or so, the cookies dried out and weren't as good.

Farmer's Casserole

This meal was very simple and satisfying. My six year old daughter was able to help me make it. (She loves to help out in the kitchen) I did make a few modifications with good results. I added another 3/4 cup of hash browns, added one egg and substituted cheddar cheese for the pepper jack. I simply didn't have pepper jack on hand. The cheddar was still good. I also substituted a can of green chiles for the green onions and added a couple of dashes of garlic and onion powder. Everyone in my family loved it!

Chicken Fried Chicken

This chicken is great. I made it for my husband's birthday and everyone loved it. I think that the addition of potato flakes is genious. It helps the coating stick to the chicken. I also used Ritz crackers instead of saltines. I suggest using Ritz crackers because it gives the coating a rich buttery flavor. I served this with homemade honey mustard sauce.

Grilled Chicken and Pasta Salad

This is one of my favorite meals. I toss it with a homemade honey mustard vinaigrette. This recipe is very open to variations. You can add Parmesan instead of mozerella, you can add basil or spinach leaves, and you can try different marinades and seasonings on the chicken.

Brussels Sprouts Bake
