Stuffed Peppers for Two
Yummy! These remind me of my dear grandmother. Stuffed peppers were one of her favorite meals. I normally use whatever I have on hand to make dinner. I didn't have quick rice, but I had some Success Bag rice. I cut the bag open and dumped the rice into the meat mixture. I cooked the peppers about an hour but the rice was not cooked. I added some more sauce on top of each pepper and cooked for another twenty minutes. They were delicious. Thanks for sharing this recipe with me.

Cowboy Cookies I
I scaled this recipe to 1/4. It made 24 cookies. They are my new favorites. I used pecans instead of walnuts, and used a heaping teaspoon to drop cookies. They needed quite a bit of extra cooking time, so I ended cooking the second sheet at 375F. I also sprayed the cookie sheet with PAM on the second tray, since the cookies did not release easily on the first tray. I recommend these cookies. They are chewy and delicious.

Perfect Pie Crust II
This crust was very easy. I complicated things by scaling the recipe to four servings. Then I used it to make three mini-pies in individual pie tins. I made two blueberry and one apricot. They were a hit. I used all butter and the Fresh Blueberry Pie II filling on this site.
