Spiced Hot Chocolate

Oooh, this is just divine! My teenage son nagged me constantly to make this, so I devised a short cut: Mix all the dry ingredients together. To make one cup, use a very slightly rounded tablespoonful of the dry mix and add a little boiling water, stirring to make a thin paste. Then add the hot milk, a drop of vanilla, top with marshmallows and enjoy! I also add a pinch of salt to bring out the flavor.

Grilled Teriyaki Chicken

Thank you Joan, this is just like an old favourite recipe which I'd lost! I even marinate a whole chicken before roasting. Definitely leave out the water and use fresh ginger, finely grated, if you have it on hand

Chickpea Soup I

Very good, with a few changes: Because green beans were mentioned in the intoduction, I assumed the "frozen mixed veg" was a mistake, and unfortunately used beans. It spoiled an otherwise delicious soup. The next time I made it I omitted the beans/frozen veg, used a fresh sprig of thyme and added 2 chicken breast halves near the end of cooking time (fried in a little olive oil and thinly sliced). I also increased the paprika to one teaspoon. My husband said it was one of the best soups I'd ever made! I'm making my version of this for a friend's dinner party next week. Thanks, Christine!

Spicy Vegan Potato Curry

The unusual combination of flavours works well. I reduced the garam masala to 1 teaspoon, because I found it overpowering and I used a heaped tablespoon of good quality curry paste. Frozen peas (added at the end) tastes better than tinned. I added some diced, cooked chicken for my husband and he rated it 5 stars!

Slow-Cooked, Texas-Style Beef Brisket

My son and I couldn't resist making this, because of the weird combination of ingredients. It was an interesting experiment, lots of fun! Not bad tasting! - but there are much better recipes for beef brisket on this site.

Kai Kang Dang (Chicken Curry with Coconut Milk)

I have to apologise to Meghan - intended to follow this recipe exactly, but lost my nerve. Anyway, the way I made it, it was delicious; a bit different and my family loved it. I used low fat coconut milk, which is a bit watery; added it all at once to the curry paste and boiled a while to reduce. I added the chicken pieces right at the end and simmered gently until just done. I halved the fish sauce and basil - it seemed a bit much. The end result had a well balanced and delicate flavour. BUT: I've dared myself to try the full amount of fish sauce and basil next time!

Pasta Lasagna

Delicious and quick, real comfort food. I highly recommend mixing the pasta with the meat sauce before layering. Also, sprinkle some of the Parmesan and Mozzarella cheese on each meat layer in stead of mixing with the ricotta mixture - quicker and less messy. You can sneak some vegies in with the meat to make this more nutricious (carrots, peas, bell peppers and mushrooms work well)

Artichoke and Sun-dried Tomato Chicken

What a surprise! This dish tasted even better than I'd hoped. As some reviewers recommended I added garlic (2 fresh cloves, finely chopped) and used marinated artichokes. Just before serving, I added some chopped parsley and freshly ground black pepper. I have also made it in the slow cooker, using chicken legs(7 hrs on LOW; add artichokes after 5 hrs). It tasted even better! (and I didn't even brown the chicken first).

Pork Chops with Raspberry Sauce

The sauce was deliciously sweet and sour and complemented the pork beautifully. I had to prepare this in advance and left the pork chops in the sauce for a few hours - then just heated and served. I used balsamic (as recommended by some reviewers); delicious but it spoils the colour - will try cider vinegar next time.

Steak and Ale Pie with Mushrooms

Definitely the best beef pie filling I've ever made. I followed the recipe closely, with minor changes: I used fresh thyme, fried the onions and simmered the beef gently for an hour (with lid on). I added 2 small carrots, sliced, with the potatoes. Because we're trying to lose some weight we gained over Christmas, I used a mashed potato topping in stead of the pastry (and reduced the amount of potato in the filling). The whole family gave it 5 stars!

Blushing Pomegranate Chicken

The sweet potato tasted really delicious but the chicken was a little disappointing. Next time I'll use less vinegar and I'll use grape juice in stead of the very expensive pomegranate juice - I'm sure you wouldn't taste the difference. Also, I didn't read the recipe properly and cut the sweet potato into fairly small chunks but it was just right; any larger and it would have been undercooked. Unlike the previous reviewer my chicken browned nicely (skin side up, above liquid) and the dish looked lovely with the green onion and pomegranate seeds over.

My Chicken Milano

This was a lovely surprise! Quick, easy and amazingly delicious. I cut the chicken into bite-sized pieces to absorb more flavour and served it over pasta with chopped parsley and a few Parmesan shavings.

Sweet and Tangy BBQ Sauce

This is definitely the best Allrecipes BBQ sauce I've tried - and there are some excellent ones on this site! As a previous reviewer suggested, I double the apple juice and omit the water. I also use fresh garlic. Pour this sauce over chicken legs and cook on "low" in the slow cooker for 8 hours for the best BBQ chicken ever!

Favorite Barbecue Chicken

My family loves my slightly altered version: I use half the sugar and honey, and add a squeeze of lemon or lime juice. Yesterday I cooked 8 chicken drumsticks in the slow cooker with this marinade; 8 hours on low. Absolutely delicious!

This has become a family favourite! I add fresh chopped garlic and a diced carrot. For full flavour DEFINITELY cook the noodles SEPARATELY, and don't add water! In a hurry I skip the oven part; I just stir the noodles into the sauce and serve with grated cheese on top. This is excellent for camping or hiking - make the sauce ahead and freeze; cook the noodles on the camping stove & stir the sauce in; serve with cheese. (It even tastes good with instant noodles!)

Pirates' Pork Chops

Unusual combination of ingredients, but delicious! Didn't have curry powder, so used a rounded tablespoon of curry paste instead; also used currants in stead of raisins. I had to stop cooking halfway to pick my husband up from football and this allowed flavours to blend nicely - will do this on purpose next time. Served it with mashed sweet potato and green beans. Perfect! My family want me to make this again soon.

Man Pleasin' Jambalaya

Just the recipe I was looking for, to take to next week's Pot Luck. My family rated it "best ever Jambalaya"! I replaced some of the broth with a tin of chopped tomato and doubled the mushrooms. After browning the chicken breast, I kept it warm and added it 10 minutes before the end, to prevent overcooking. I also gave the Jambalaya 10 minutes standing time, before serving.

Herbed Sweet 'n' Sour Chicken

Quick and delicious! Reduced the oil to 1 tablespoon and replaced the other 5 with pineapple juice. Thanks to other reviewers' recommendations, I added pineapple pieces (wonderful addition!) and marinated the breasts for about 5 hours. Because I had so little oil in the marinade I was extra careful not to overcook the chicken and basted often. Rave reviews from family!
