Mini Chip Snowball Cookies

These are fabulous! When I was a kid my mom made Russian teacakes at Christmas and I never liked them-they're too bland. I was thrilled when I found this recipe which is similar but actually has some flavor. I add some cinnamon to mine-maybe a teaspoon, I never measure. My 8 year ols son loves these!

Chocolate Chip Cheese Ball

This is soooo delicious. I don't bother with forming it into a ball though. I just spread it in a serving dish and top with pecans. I find its easiest to serve it with hte graham cracker sticks. Everyone just loves this!

Coconut Cream Cake I

This cake is fantastic! I made it for Easter and took the leftovers to work where it was quickly gobbled up. Everyone loved it nad asked for the recipe. They couldn't believe it was a cake mix. I couldn't find the coconut cream anywhere so I had to use coconut milk-just make sure to shake the can before opening if you use this because it separates. I was about to throw it out thinking there was something wrong with it until I read the can. Also, I added more coconut extract because I love the flavor.

Seven Layer Bars

These are quite possibly the best bars ever! They never last long at my house-as a matter of fact my 6 year old son just asked the other day if I would make the bars with the sweetened condensed milk! My suggestion for the crust-just add more crumbs. I never measure mine, I just melt the butter and add crumbs until the butter is soaked up. You'll get a much firmer crust this way. I never measure the other ingredients either-just sprinkle on however much we like of each thing.

Pecan Turtle Bars

These are one of my favorite bars! I do the topping a little differently though. When I make them I double the butter and sugar mixture for the topping. Another reviewer said there wasn't enough to cover the bars but this solves the problem and its the best part of the bars anyway.

Apple Delight

This recipe is so good. I make it with canned sliced peaches and butter pecan cake mix and its even better. Serve it warm with vanilla ice cream!
