Baked Orange Roughy Italian-Style

Mine turned out a little watery but may have been the frozen roughy. Will use leaner cuts and a roasting pan next time so water will drip off. But very good.

Orzo with Chicken and Artichokes

This was very good. My husband even ate it and he doesn't like artichokes. We forgot the pancetta, but it was good without. However, the balsamic was a little overpowering. Perhaps it wouldn't have been with the pancetta.

Easy Broccoli Quiche

I don't think this is any EASIER than any of my other quiche recipes, but it's definitely delicious! Made a whole wheat crust which really enhanced it. DEFINITELY use fresh veg - it makes the whole quiche!

Scrumptious Strawberry Shortcake

Very good. Used 1/2 whole wheat flour and topped with cinnamon and sugar. Next time won't bake as long as they were a tad dry. Used milk instead of heavy cream ,which may be the reason.

Fabulous Zucchini Grinders

Very good. Everyone had seconds. However, next time I will make my own tomato sauce - I think that would taste fresher. Also wish I had been able to find 100% whole wheat sub buns.
