Amy's Garlic Egg Chicken

This chicken is so full of flavor. I used 2 eggs to make the garlic "marinade" instead of 1- it coated all 4 breasts evenly. I also reduced the bread crumbs to 1/2 cup and the cheese 3/4 cup. It was so moist and tender after cooking 15 mins each side.

Spinach and Mushroom Quesadillas

These came out with much more flavor than I expected. Loved them!! I did add onions to the spinach/mushroom/garlic that was sauteed. I seasoned the sauteed mixture with s&p, onion powder, and garlic powder which may have increased flavor. I used olive oil and 4 garlic cloves to sautee and then used the butter only in the final step when browning each side of the quesadillas. served with sour cream and loved it.

Zucchini Parmigiana

I am Italian and grew up eating authentic home-made Italian food. This recipe was DECLICIOUS!!! I re-scaled the recipe for 5 people and everything came out perfect. Only thing I modified was using 3 whole eggs instead of seperating the whites, part skim ricotta to cut down on calories/fat, and baked for 35 mins instead of 45. I also used both zucchini and squash. Put some ziti noodles with some of the leftover marinara on the side and ate this as the main course. YUMMMMMMMMMMMMMMM!

Fast and Friendly Meatballs

wow was this a great recipe. I used closer to 1/2 cup of seasoned breadcrumbs and added a good amount of parmesan cheese, as well as salt and pepper, garlic powder, and onion salt. Such a great snack, I like dipping mine in light ranch or just eat them plain!!

Mushroom Pork Chops

I was very dissapointed in this recipe. I felt it was way too bland. The only part of it I modified was 1.Sauteeing the onions and mushrooms before adding soup 2.I used Healthy Request by Campbells Cream of Mushroom Soup which was a reduced sodium version of regular cream of mushroom and 3.Added 1/2 cup of milk to soup, as other members suggested. I seasoned the chops before browning, used garlic when browning, and cooked the chops which were thick for the 1 hour. Well the chops were a little overcooked and totally bland. I wonder if adding the milk and using reduced sodium soup made the difference..who knows. :(
