Chicken Squisito...Google it and you will absolutely love this recipe. I found it years ago in a magazine on an ad for Sorrento cheese..its my favorite.

Amy's Garlic Egg Chicken
This chicken is so full of flavor. I used 2 eggs to make the garlic "marinade" instead of 1- it coated all 4 breasts evenly. I also reduced the bread crumbs to 1/2 cup and the cheese 3/4 cup. It was so moist and tender after cooking 15 mins each side.

Spinach and Mushroom Quesadillas
These came out with much more flavor than I expected. Loved them!! I did add onions to the spinach/mushroom/garlic that was sauteed. I seasoned the sauteed mixture with s&p, onion powder, and garlic powder which may have increased flavor. I used olive oil and 4 garlic cloves to sautee and then used the butter only in the final step when browning each side of the quesadillas. served with sour cream and loved it.

Zucchini Parmigiana
I am Italian and grew up eating authentic home-made Italian food. This recipe was DECLICIOUS!!! I re-scaled the recipe for 5 people and everything came out perfect. Only thing I modified was using 3 whole eggs instead of seperating the whites, part skim ricotta to cut down on calories/fat, and baked for 35 mins instead of 45. I also used both zucchini and squash. Put some ziti noodles with some of the leftover marinara on the side and ate this as the main course. YUMMMMMMMMMMMMMMM!
