My Girls - Christmas 2008
About this Cook
I'm happily married with 4-year-old twin daughters and an 8-month-old daughter. Life is good!
My favorite things to cook
Everything! But my family and friends especially love my turkey, cornbread dressing, lasagne, potato soup and pernil.
My favorite family cooking traditions
I love making Thanksgiving dinner and Christmas dinner with turkey or ham and all the trimmings that I had when I was a child.
My cooking triumphs
I'm Irish, but I can cook a pernil and arroz con gandules to rival any Puerto Rican!
My cooking tragedies
I've had a few mishaps, but nothing I would call a tragedy. I've never made anything that was so bad it had to be thrown in the trash...at least not that I can recall...

Sloppy Joes II
Almost as easy as opening a can and so much better! Perfect balance of tangy and sweet. Hubby says to always use this recipe.

To Die For Blueberry Muffins
I make these muffins all the time when blueberries are in season. The thick batter makes nice moist muffins and the blueberries never sink to the bottom. I usually leave off the topping as the muffins are good as is. The only change I make is to add a little vanilla, but they are good without it too.

Cool Whipped Frosting
Love this stuff! I hate really sweet heavy frosting, and this is really light and just sweet enough. I've made this with both regular and sugar free pudding mix.
