Rosy's Palak Paneer

This is so good! I rushed it because I was starving, but it was still delicious! Next time I will let it simmer for the hour as suggested. Follow the directions well, I can tell I didn't saute the onion long enough and the spices didn't have time to blend as well as I know it could have. Next time, I will get this ready in advance so I have enough time. I would also reduce the salt to 1/2 a teaspoon, because it was way too salty. I also added two shakes of cayenne pepper. This was perfect over basmati rice.

Cheesy Potato and Corn Chowder

This was very very good! Mine didn't look like the photo though because of the chicken stock I used. It was a packet and it had orange coloring, so the soup LOOKED like it had a bunch of cheese in it, but it didn't!

Roasted Cajun Potatoes

I used Russet potatoes instead of red and added an extra clove of garlic. These were SO GOOD! I don't know if I didn't use the full amount of potatoes, but these were perfectly spiced. I suggest others who said it didn't have enough flavor to double the spices or use less potatoes. These were great with a little bit of sour cream on the side! Oh, and I only used a tablespoon of oil. Perfect!

The Best Thai Peanut Sauce

This was an excellent sauce, but it really makes a lot! I ended up with more sauce than I needed for a lot of noodles. Next time I'll make it smaller or use more noodles for leftovers. I tossed the sauce with sauteed fresh veggies like onions and peppers. The hot sauce you use makes a difference too. I used Dave's Insanity Sauce, and this was so spicy! So be aware of the hot sauce you use and how much, if you don't like it spicy!

The dressing made the salad, and would make any salad great. I went to three stores yesterday to find the sumac, and not a one had it--so be forewarned! Now I'm tempted to order it online, because I thought for sure the specialty ethnic stores I went to would have it. Anyway, it was great without the sumac but I know it would be better with it. I made the dressing the night before the let the flavors develop. So good!

Texas Caviar I

Make this recipe even better by doing the following: Drain the "caviar" mixture before serving. Spread an 8 ounce box of cream cheese on a plate, and gently layer the caviar on top of it. People will eat this up and the cream cheese also mellows a little of the spice even if you go a little crazy with the jalapeno!

BBQ Pork for Sandwiches

I doubled this recipe and put about three pounds in each slow cooker. I used someone else's suggestion, and put a bottle of beer in each crock pot. One I did a Black Butte Porter and the other Bud Light. I used two different types of barbecue sauce too, one was Sweet Baby Ray's and the other was a Honey BBQ from Kraft. Both turned out great, but I was concerned they were a bit overcooked. Make sure not to overcook the pork!

This was pretty good as a sauce, but I prepared it with lamp chops instead. I served the chops over rice, and the sauce was scooped out of the pan to coat the rice and chops.

Shish Tawook Marinated Chicken

I made this almost to the letter except I didn't use Allspice because I didn't have any and I used fat free sour cream instead of the yogurt. Oh, and I added 1/4 teaspoon of paprika to the dipping sauce (as my coworker suggested!) and it turned out great! Next time I make this I will make the dipping sauce when I make the marinade for the chicken so it has more time to develop. It smelled so good cooking and there wasn't a single bite of chicken left! I will also try this with lamb!

Herbed Macaroni and Cheese

This was a great and quick dish for dinner. I used Muenster cheese with the cheddar, and it smelled so good while it was in the oven. The only thing I missed from my regular macaroni recipe was diced onions. I think I'll add them next time and it'll be even better.

Tomato and Mozzarella Bites

These were the first appetizer to disapear at my friend's wedding! I marinated the mozzerella and tomatoes in the sauce, assembled them and served them on a large platter. I will make these again, so easy!

Sauteed Garlic Asparagus

Cola Pork Chops

This gave me the idea to mix two different recipes on this site. Instead of cola I used root beer and added 1/2 a teaspoon of ground ginger, 1/2 teaspoon of garlic powder and chopped onions. The recipe turned out to be 5 stars, but I changed it so much I feel bad rating this one 5 stars.

Mexican Pork Chops

I too, think this probably would have been better in the slow cooker adding the rice an hour before it was done. I just don't think the pork was very flavorful. I would also add either more chilies or maybe jalepenos to the mix too!

Hummus III

This was very good, but was a little on the dry side for me. I added some more lemon juice (about 1 Tbls.) and kept adding the reserved juice from the garbanzo beans I set aside to get it to the right consistency. I added extra garlic too!
