Italian-Style Pasta Toss

This is an excellent salad to travel with. I made it the night before and it was awesome--minus the canned tomatoes. I would either do them fresh or forget them. This is a great base for a recipe if you want to add/take out veggies or meats.

Brown Sugar Meatloaf

This disapeared faster than I could put leftovers away. Two people all but finished it in one sitting. I had slightly less than 1 and a half pounds of beef. I also didn't have enough brown sugar, so I scaled those down to the same amount. Next time, I would add some fresh chopped garlic to the mixture.

Delicious Ham and Potato Soup

This turned out very good, even with the ham (says the vegetarian!). I made it and picked out the ham for my bowl. I served it with Simple Tuna Melts from this site, perfect winter dinner. Oh, I didn't add any salt either, I figured the bouillon had enough sodium in it.

Red Enchilada Sauce

This was a good recipe, but it did have a hint of Italian taste to it. I didn't have the salsa though, which probably would've helped. I added a can of tomato paste to the mixture, and it was the perfect combo/consistency. If anything, it is a great base to get the enchilada sauce the way you like it!

Salmon with Creamy Dill Sauce

How could anyone go wrong with this recipe? It was so easy to make and everyone loved it! Salmon disapeared at my house on Christmas Eve! Everyone used the sauce for the fish, and for the roasted potatoes too!

Chicken Cordon Bleu I

These were way too hard to roll, so I simply pounded them thin, rolled up a slice of monterey jack cheese in a slice of ham and folded the chicken in half over the ham-wrapped cheese. Then, someone suggested I wrap bacon around each piece of chicken so I did that too. I baked them, because I was scared I wouldn't cook them enough in the pan. I was surprised about the amount of grease in the pan (probably from the bacon) but once I served them for Christmas Dinner my family gave them a rave review. I'll make them the same way again next time, but I'll put a cookie cooling sheet into my pan before I bake it, that way I'm sure the chicken doesn't just sit in the grease.

Sweet Potatoes for Two

This is a great recipe to start with, but I doubled the amount of potatoes and kept everything else the same. I felt it would be too sweet if I added so much brown sugar. As I made them, they turned out great, a hint of sweetness but not syrupy. I also didn't know how they were supposed to be cooked, so I cut them into squares and then boiled them for 10 minutes while I made the sauce. Then I put them in a casserole pan, poured the sauce over and waited until it was ready to throw the meal into the oven. Truly awesome!

Fried Cornmeal Mush

Just like I remember it as a kid! I made this, but then didn't eat it for two days because of a scheduling conflict and it was still good. I also sliced it a lot thinner than 1 inch, more like 1/4 inch because we always had it crispy, and I don't like the thought of it mushy. I poured raspberry syrup over it because it was all I had and it was so good!

Baklava

I couldn't make it through all the tips, but I thought it was important to point out another pointer. Be sure when you make the sauce you make it slowly! If it gets too hot and bubbly, it just becomes harder when the whole thing cools, and hard baklava is just not cool! The same thing when making rice crispy treats, if you don't do the marshmellows slow they still melt and look the same, but when you go to cut them they are rock hard!

Grilled Salmon I

This was so easy and I put them in the foil packets and did them in the oven. Be sure to adjust your cooking time depending on how thick the salmon fillets are. I also sliced a lime up and put a layer below and above the fish when I cooked it, it went over very well!

VELVEETA® Fudge

I was totally against even tasting this fudge, much less even making it. However, my coworker made it and I tried a piece. Then two. It was very good! I tried making it this weekend because I needed a last-minute dessert item to take to a party. Not only did everyone love it (and never guessed my secret ingredient!) but some said it was the best fudge they ever tasted! This is pretty fool-proof for even the most beginner cooks. I did microwave it for an extra minute to get it all melted though.

Pepperoni Bread

This is so good! I put a little bit of pizza sauce on the inside, mozzarella cheese, green onion, diced red pepper, parmesan, and pepperoni. I used the pillsbury dough in the can and it came out great--more than enough for two. We dipped it in pizza sauce and it was great. Note: Be sure to lay it out in the direction you are going to roll it up--I was rolling sideways, not so easy to maneuver.

Slow Cooker Stuffing

This was good, but I tried it in the oven. I agree with the others who said there is way too much liquid in this. It tasted great but was way too mushy for my taste, which was unappetizing. If I had known, I would've added another 3 cups of bread. I would try it again though--great flavor.

Laura's Quick Slow Cooker Turkey Chili

This was perfect with turkey leftovers. Took me 5 minutes to throw this together. I added a white bean instead of a kidney to have a bigger variety. Instead of the two cans of tomato soup I added to cans of tomato juice and one can of diced tomatoes. You will need more liquid for the recipe! Oh, I also added a can of drained corn and made cornmeal muffins to go along with the chili. This would be great with leftover rolls from Thanksgiving too.

Honey Baked Chicken II

I also used Dijon mustard for this recipe. It was so simple. I used chicken legs because it was all I had on hand. I flipped them every 15 minutes and cooked it uncovered. I will make these again for sure.

To Die For Blueberry Muffins

I really didn't think these turned out that great, at least to live up to the reviews. It seemed way too solid and cake-like, instead of fresh and springy. I was disapointed they tasted old even though they just came out of the oven. Also, I agree it was way too much topping, and I should've used brown sugar. Then, the butter ended up melting all over the place and under the cupcake wrappers, making them a greasy mess. On top of that, all of the white sugar and flour made them really unhealthy. Either I'll take some of the suggestions to make it healthier or I'll move on to the next muffin recipe!

Easy Spicy Roasted Potatoes

This was OK, but not amazing. It seemed like there was way too much salt, even after I reduced it to half a tablespoon. I left off the cheese to reduce the calories too. I think the "Roasted Cajun Potatoes" from this site are 100 times better if you're looking for a roasted potato recipe.

Pork Chops with Tangy Honey Sauce

I also added some red pepper flakes to the sauce to give it some heat. Then I added a few extra cloves of garlic. It went over very well, but I think it would have been better if allowed to marinate overnight.
