Grandma's Gingersnaps

This recipe tasted okay, but the cookies were so flat--I don't know what went wrong! I don't know if I messed up the ingredient amounts a bit or if something was old, but it wasn't quite a 5 for me. I'll try to make them again and rate them again!

Lola's Horchata

This was pretty good, but not quite the texture I was looking for. COSTA RICAN RECOMMENDATION: I had this while I was in Costa Rica and I think next time I'll do the following changes: Bring the rice and water to a boil together with a cinnamon stick and turn it off. Blend this (without the cinnamon stick) and then strain it. Add the sugar, vanilla and let it sit overnight with the cinnamon stick and some cloves. In the morning I would add the milk and call it good! Oh, I also used 1/2 cup of sugar. I'm going to try this again without boiling it, but will also try the boiling method. Also, will try this with barley too. :)

Beth's Spicy Oatmeal Raisin Cookies

I was really against making these, because my go-to oatmeal raisin cookie recipe is Betty Crocker and it's awesome. But, I thought I would give this one a try for something different. It turned out great! Just out of curiousity, I looked at the recipe next to the Betty Crocker, the only difference was BC doesn't have cloves! Ha ha, go figure, right? Anyway, still a great cookie!

Marinated Grilled Shrimp

"This shrimp is the s#it!" was the review of everyone who ate it last night. I don't even eat shrimp, but this smelled so good while I was putting it on the barbecue! I even had people stealing it off of one another's plates! I will make this again--I wish I could give it more stars!

Faux Jerk Chicken

This smelled great--even attracted four of my neighbors over for dinner! Good thing I had made extra! I think the cinnamon and allspice added a different twist and it sure smelled good cooking it! I didn't have time to track down a scotch bonnet pepper, so I used a jalepeno. This wasn't spicy at all, no leftovers here!

True-Blue Potato Salad

Thank god I found this before the summer barbecue season! Now I have my go-to recipe for potato salad! I think the red potatoes were a nice touch, it made it different from other white potato salads. I added a little bit more blue cheese too and mixed it all together. My only other tip would be to use regular sour cream versus fat free. I used fat free, and I think the dressing came out a little thin. With the regular, I think it might stick to the potatoes a little bit better. :)

Tail Burner Firehouse French Fries

Oh good lord, this recipe did /not/ go well. First, since I was on a kick of trying to use up things in my house, I thought I would make fries from potatoes. Then, I had to figure out how many potatoes would be in a bag. I figured 5? Hmmm. So it didn't look like very much, so I put half the amount of spices in, 1 tbl lemon pepper, 1 of the crushed red pepper, 1 teaspoon of salt and garlic powder. I totally forgot the chili pepper and black pepper (did it really need more after all of the pepper in the lemon pepper?). So, I baked it for 30 minutes covered in a casserole pan to get the potatoes cooked. Then I uncovered it and baked another 30 turning a few times. The result? They looked good, smelled good, but too dang spicy to enjoy! I ate them--albeit with about 1/2 cup of ff sour cream to dip them in. Next time I'll either quadruple the amounts of potato or cut down on the red pepper flakes!

Banana Sour Cream Bread

This was a very moist bread--and a great way for me to use up some of my sour cream that I keep buying because I have no short-term memory! I scaled it down because I only had 4 bananas. Great with my morning coffee on the way to work!

Sean's Falafel and Cucumber Sauce

This was an awesome recipe! I followed the falafel recipe to a T, except my only change was to add half the amount of bread crumbs. I made them into smaller patties (about 1 and a half tablespoons with a cookie scooper!) and baked them. I ended up with about 24 patties and baked them at 425 for 15 minutes on each side. I made my own tzatziki sauce and this was so good in a pita with red onion, lettuce, tomato and the tzatziki. I will use this recipe over and over again, thank you!

Foil Wrapped Veggies

What a great veggie dish for grilling! I love being able to use sweet potatoes because they are better for me than plain white. I scaled this way down for two, and obmitted the white potato which would've been too much for us anyway. Next time I'm going to add carrots and asparagus to this, and probably not use the green beans unless I get some great fresh ones.

Grilled Asparagus with Roasted Garlic Toast and Balsamic Vinaigrette

This is a recipe I will use a lot this summer for summer grilling! I did the garlic on the barbecue while I had other stuff cooking in double-lined foil packets and olive oil. When I did the asparagus I put them in foil packets on the grill, I don't have a veggie basket and I didn't want them falling in because I used skinny asparagus. They were done to perfection in less than 10 minutes--those suckers cook fast!

Sliced Tomatoes with Fresh Herb Dressing

I made one big change that made this delicious, even though I had to use some bottled spices because I didn't have fresh on hand. I added two tablespoons of red wine vinegar, oh my god good. This even smelled awesome while I made it, and because of timing it didn't get to sit for long either. The red wine vinegar was even better than balsamic, which I didn't think was possible. If I make this recipe again with fresh ingredients and enough time to marinate, this recipe is 10 stars! I will make this again for sure!

Baby Guinness

This was a fun treat on St. Paddy's day. We poured the cream on the top over the back of a spoon so it rests nicely on top and it looked great. This is very sweet, perfect for the sweet tooth!

Bandito Beans

The only thing I didn't put in here was the cut green beans, mostly because I forgot to get them from the store. The more I thought about it though I wouldn't have added them, 5 hours in the slow cooker is way too much for green beans, yuck! I only added 1/3 cup of brown sugar (I didn't want them too sweet) and these turned out great. I thought there wouldn't be enough liquid, but after 5 hours it was delicious.

Caramelized Onion and Blue Cheese Orzo

I had such high hopes for what sounded like such a delicious dish! I should've read all the reviews. Mascarpone did not work, cream cheese would have been better, four onions was NOT too much so keep them all in, 1 pound of pasta was way too much and too bland, the spinach needs to be added while it's still cooking to wilt it some. If I make it again, I'll make drastic changes. I agree it was missing "something" but not sure what. Toasted walnuts might have been a good addition too, but not sure what else would help this...

Mouse's Macaroni and Cheese

This was okay, but I think it needed more mustard and some garlic. That would've made it a 5! I used rotini pasta because it's all I had, but it was still good. Leftovers will probably be better tomorrow!
