Black Bean and Salsa Soup

I really didn't think this would turn out so great! It's so easy, I even used fresh beans I had made the day before. In addition to the cup of salsa, I also dumped in there some chopped onions and cilantro I wanted to use up. To top it off, fresh green onions and a little cheese went great! Next time I'll add a few slices of avocado too!

World's Best Lasagna

I didn't cook/soak the noodles at all, I just assembled the day before. I put it in the fridge so it did take a little longer to cook through than stated, but overall a great recipe.

Amish Macaroni Salad

This was great--even though I didn't have any red pepper in the house. I think sliced green olives would be good mixed in too. For people who like tuna, this would be good with tuna mixed in too for more of a meal or lunch idea.

South African Yellow Rice

This is really good, but it is too sweet. I'm going to try it again, but next time with less sugar because it was too sweet. Maybe with brown sugar? Half brown, half white? I served it with spicy beans and that helped to balance it.

Coconut Muffins

I doubled the recipe and this made 18 muffins that rose A LOT (take a look at the amount of baking soda!). This made a really thick batter, so thick I checked my measurements again thinking for sure I had left out something! The muffins turned out really dense and cake like, not what I was looking for at all. It was almost like I made a biscuit recipe and put coconut extract in it, and not enough of it at that. The topping looked great, until I added the warm butter to the mix, then it was a blob of sugar. Leave the butter out, and sprinkle it on top instead of deal with a wet sugary mess! I'll keep looking for a coconut muffin recipe.

Peri Peri African Chicken

What a moist chicken this made! I used boneless skinless and had to used powdered ginger, but this turned out better than I expected. I marinated for 24 hours in the fridge. Very fragrant and great presentation!

Fried Chicken Chunks (Chicharrones De Pollo) Dominican

I used the seasonings to a T and marinated for 24 hours. Then, in an attempt to make this healthier, I grilled them instead of the flour and frying them. Not exactly chicharrones anymore, but the flavor was still great.

I really doubted that these would come together with so few ingredients but they really came out great. I recommend these are in for the full 10 minutes. These are almost the consistency of brownies, but in a cookie shape.

Big Al's K.C. Bar-B-Q Sauce

I used this as a marinade for bone-in pork chops for 24 hours, only I didn't have the smoke flavoring. I literally had people licking the bones the sauce was that good! I put the leftover sauce in a pan, and brought it to a simmer. I barbecued the chops and used the sauce to baste every time I turned. I will use this recipe again, next time I'll use fresh garlic though.

Hot German Potato Salad III

This was awesome--just like my mom used to make. I ended up making a double batch to fully cover the potatoes. I made these ahead of time and put them in a casserole pan and warmed them up before serving. I can't wait to make these again.

Hot Artichoke and Spinach Dip II

I followed several user suggestions to get this perfect. I used four cloves of garlic and made sure to mix in the mozzarella cheese rather than put it on top. I added about 1/2 cup of sour cream to the mixture too because I used a full (frozen) box of spinach.

Easy Morning Glory Muffins

I made this even easier by using baby carrots (hey, it's what I had) and putting them in the food processor and pulsed them until I had the consistency I wanted. I put the apple through the corer/peeler thing I have, then put it through the food processor as well. I accidentally used sweetened coconut because I didn't read the directions well enough before I went to the store. This still came out great! Next time I'll add more raisins, this is so good, not too sweet at all-which I was sure it would be!

Lemon Garlic Tilapia

I made this with stripper fillets instead and then put them in double-lined foil packets on the barbecue. I used a combo of lemon/lime juice and fresh Italian parsley. These came out great, I think the recipe is versatile for any fish. Oh, I made more of the butter mixture as well to cover the fillets.

This was a refreshing drink, and could easily be adapted for many tastes. Next time I make it, I think I'll add some more milk and some more ice as I found it pretty thick like a milkshake. I loved that this has so much vitamin A and C, a great way to get my fruit servings in too! Also, next time I might add some strawberries, raspberries or a banana to vary it a little! (This is also known as Batido de Mango in many latin countries!)

Oven Roasted Potatoes

This was good, but I felt it was a little overkill on all the spices it used--talk about pricey! I didn't add the dried parsley because I didn't have any. It smelled great baking too, and makes a LOT of potatoes, we'll be eating this all week!

This was great--and I have to say the one time I'm sorry I listened to the reviews rather than the recipe. I double the amount of whipping cream, afraid there wouldn't be enough for 6 parfaits. Not only did I have enough, but it was way too much! You don't want a ton of whipped cream, it should be mostly fruit I think! Regardless, they were still delicious with the lemon taste! As a side note people enjoyed putting the whipped cream on their coffee for brunch!

Cheesy Sausage Casserole

This took a little longer than the 40 minutes that it stated. I had mine in for 50 minutes, then broiled it for 2 more minutes to ensure the top was cooked as that was the only thing that didn't look done. I ended up using real sausage because I couldn't find any veggie ones at the small grocery store I went to. If I made this again, I would leave out the salt--it didn't need it especially with the sausage. Plus, the cheese adds a lot of flavor.
