Oh, how I wish I had more than three days to prepare for vacation.
I always do this though; life seems to operate in slow motion up until the day before I leave. It’s only then I remember the list of things I really should’ve done a week ago. I will soon switch into high gear, the washer and…
MORE
I'm always looking for new recipes. I love to cook, but I also love eating out! I love to eat things at restaurants I'm too chicken to make at home. I've been a vegetarian my whole life, but I do cook meat for my family and friends. If I have the time, I love to browse through my cookbooks and cooking magazines--even when I'm not looking for a recipe!
My favorite things to cook
I have so many favorites! I enjoy anything ethnic and flavorful, so Indian and Thai are at the top of my list. I love to try new things too, as long as I can determine if there is no meat in it! Secretly I desire to be a better baker, but other than basic cookies things don't work out in my favor.
My favorite family cooking traditions
My family often wonders where I get my love for cooking--since my Mom does not like to cook and my Dad was always too busy to cook. Perhaps I am a foodie at heart and it was an instinct for survival?
My cooking triumphs
This would have to be Christmas 2007. I cooked the biggest meal I have ever made, all from scratch. Because we knew it was our last Christmas with our Dad, I made all of his favorites, including Salmon with Creamy Dill Sauce and scalloped potatoes. I also made Chicken Cordon Bleu, sweet potatoes, stuffing, and a green salad. I almost ran out of room in the oven!
My cooking tragedies
Last Tragedy: I recently had guests over and I barbequed boneless skinless chicken breasts and chicken thighs. I had no idea the little thighs would take so much longer! The breasts were done, so I took the thighs off too. One person commented "It's like chicken sushi!" Needless to say I had to run the thighs back out to the grill before anyone ate them!
