Double Chocolate Brownie Cake

This is the same recipe that is in The Cake Doctor (it's called Darn Good Chocolate Cake). The only difference is she says to bake for only 45-50 min. Mine took 48, any longer and it would be dry. I used a simple sugar glaze on top. I also used 1/2 c. sour cream and 1/2 c. soy milk and only 1 c. chocolate chips. It was delicious.

Butter Flaky Pie Crust

The dough was very easy to work with although I did need a bit more water. I only chilled it for 10 min. and the crust did lose its nice crimped shape but didn't shrink much. It was very flaky and had a nice crunch to it. I made mine for pumpkin pie but I think this crust would be best with fruit pies. Overall very tasty, I do use salted butter plus most of the salt called for.

Sweet Corn Bread

Excellent! Moist and sweet. I only had 1/2 c. sour cream so I added an extra 1/2 c. milk plus 1/8 c. flour. Used 1/3 c. sugar too. Baked in a 9x9 pan for 19 min. It was perfect, everyone loved it!

Fabulous Zucchini Grinders

These were excellent! I am giving 4 stars since I changed the recipe a bit to make it better. I used zucchini, summer squash, mushrooms, green peppers, and onions. Left the cheese out because that is a lot of cheese and not necessary. Instead I sprinkled Parmesan on top. I also didn't bake them, just spooned the mixture into the bread.

Chocolate Zucchini Bread I

Mine came out moist but a bit crumbly at the bottom. Not as dense as most quick breads, more cake like. I doubled the chocolate, used half whole wheat/half white flour, half brown sugar/half white. Overall it had an excellent taste and I loved the chocolate chips in it. Baked in a glass pan this took only 55 minutes at 340 degrees. Next time I will add more zucchini.

Peach Raspberry Cobbler

This was delicious but needed some alterations. I used brown sugar for the fruit mix, only 3/4 cup milk, and 2 less tablespoons of butter. I also used blueberries because I had no raspberries on hand. The edges had a nice crispy crust texture and the middle was gooey but I think it would be too gooey if you followed the recipe exactly. Next time I will make 1 1/2 recipes for the dough (thought it needed more) but keep the rest the same. I was hoping it would look more like "Sumchelle's" photo. Will try this again though.

Chocolate Chip Banana Muffins

These are very delicious. I halved the recipe, used a little more banana than called for, substituted brown sugar for white, and used half butter/half oil. They cooked for 20 minutes. Moist, sweet but not overly and had a great banana taste.

Ciabatta Bread

This was amazing. Everyone loved it. It had a nice crunchy crust with a tender and soft inside filled with air bubbles. The dough is not that wet, I think people exaggerate or just don't like baking bread that much. I just dumped it out of the bread machine, let it rise, then stretched it (make sure to flour your fingers) into 4x12 loaves and let it rise again. I followed the recipe exactly. There is minimal touching involved. Easy and super delicious.

Herbed Batter Rolls

These were delicious. I realized half way into baking that I had no eggs so I just added a tbs. of baking soda. I also added some spinach and 1/4 cup Parmesan cheese. They smelled wonderful and were not very dense at all. 4 stars only because the original recipe would probably be too bland for me.

Pumpkin Crumb Cake

This was tasty. I replaced 3 tbs. butter for applesauce in the crust and took out 1/8 c. of sugar. The crust was more cake like then a dense bar but was still yummy. I also replaced 1 tbs. butter in the crumb mix with applesauce and used only 1/8 c. sugar and could not tell the difference. Overall this was yummy but I am not sure if I will make it again. I also think that it will taste better tomorrow after refrigerating.

Used half whole wheat/ half white flour. Turned out really tasty but the first few did not puff up. They all tasted good, very light and tasted great with a tofu veggie stir fry stuffed inside.

Easy Broccoli Quiche

This was good but I made some changes. I used colby jack and extra sharp cheese instead. I made mine without a crust do to time constraints. It came out a bit watery though. The recipe does not list a pan size but says to use a 9inch crust. When I poured my batter into a 9inch pan it overflowed and was way too much filling. Next time I will use a 10inch pan. Overall this was tasty but needed some alterations.

Burger or Hot Dog Buns

These were amazing. Everyone loved them. I did make two changes. I used 1 1/2 cup bread flour in place of all-purpose. I also let them rise twice as long. They were not dense, but soft and fluffy. Smelled amazing.

These were very good. Excellent with powdered sugar and strawberries. The baking isn't consistent though. I have made them 3 times, sometimes they bubble up and other times lay flat. Either way they taste the same but not as impressive looking.

These were more cake like than dense bars as expected. They were very delicious though. Very light, fluffy with the right amount of taste. I doubled the recipe, and used 1 c. brown sugar, 1/2 c. white sugar.
