Baked Potato Soup

Can't explain it but it's not 5 star. What's not to love? It's got all my favorite stuff, but wasn't what I expected. I love basil so I don't think that's it. Maybe it's cooking the onions & garlic in the bacon grease. It was good but not great.

Holiday Chicken Salad

I'm sorry but 3 stars is being generous. I thought it was blah & average & the paprika gave it that strange brownish color of canned tuna. If you make this at least leave out the paprika.

Cranberry Orange Cookies

YUM! These were soooo good! I used 1 1/3 cup craisins rehydrated overnight in 1/2 to 1 cup fresh squeezed oj. I also used 1 cup pecans instead of walnuts. And instead of the glaze I drizzled with melted white chocolate. I needed them to be firm on top so I could stack & ship them & the hardened white chocolate did the trick. They were beautiful!

Stuffed Shells I

YUM! 5 stars for inspiration! I used half ricotta & half cottage cheese, one egg instead of two & fresh garlic. I added ground beef to half of the sauce since dh likes meat. Leftovers were so good & I'm sad it's all gone. I'll be making this one often!

Mini Pumpkin Muffins with Orange Drizzle

These were a hit for Sunday brunch. I didn't do the glaze. I just mixed some powdered sugar, cinnamon & a little ground ginger & sifted it over the muffins. They baked nicely & came out of the pan easily.

Fettuccini Carbonara

I cut the fat & calories big time--mainly because of the ingredients I had on hand. It was still sooooo good! I only used 1 T olive oil, 1% milk instead of heavy cream, 1/2 lb of bacon instead of a whole pound, & 2 egg yolks instead of 3 (because raw eggs are icky!) I also added some grilled chicken, basil & oregano. This is a GREAT recipe & I'll make it as written as soon as I have all of the ingredients. We all loved it!

Garlic Chicken Pizza

3 stars from me, 4 stars from my hubby. This would have been so much better with homemade sauce. The Ragu Roasted Garlic Parmasan sauce had the consistency of Elmer's Glue! And I did not like the taste of it at all. I will never buy that again. I'm going to try the other Garlic Chicken Pizza recipe & I'm hoping it will hit the spot. The concept & elements of this recipe is GREAT, just need a different sauce.

Berry Crumb Bars

I used butter instead of shortening for the crust and diced up fresh peaches for the filling. To me they were just ok but my guests enjoyed them served warm with vanilla ice cream. I'd like to try them again with blueberries or raspberries. They did bake up very nicely & sliced & served beautifully. I agree, they need a dusting of powdered sugar or a glaze or maybe some almonds or macadamia nuts in the crust would help. I can't put my finger on it but they missed something in my opinion.

French Bread Rolls to Die For

LOVED these! Didn't even have to get out my mixer. Just mix with a spoon. They were super easy & delicious. As soon as they came out of the oven I brushed them with melted butter mixed w/ salt, pepper, oregano, shredded parmesan & garlic powder. I've eaten three of them tonight & am so tempted to go for #4! I served them with spaghetti & meatballs.

Enchiladas Suisas

Everything came together on this one and they were THE BEST chicken enchiladas I've ever made. Seriously, chicken enchiladas should not have canned soup or cream cheese in them so thanks for posting exactly what I've been looking for! I cooked the chicken in the crockpot seasoned with garlic, cumin & salt. On step 3, I mixed the cream in with the extra salsa verde instead of pouring the cream over the top. DELICIOUS!

Tacos De Matamoros

LOVED the results of this cooking method! I don't usually like ground beef but THIS is delicious! Not sure how to explain it but it turns out kind of like the texture of Taco Bell's gound beef. I was afraid to cover it in water so I started with less, then added more water as needed. I also left out the green pepper. I agree, if it's bland, spice it up but this cooking method rocks!

Spring Vegetable Bundles

EASTER HIT! This one gets 5 stars on technique alone! The boiled & cooled green onion tops were the perfect ties. Steaming in a skillet was very easy & kept my oven free for the rest of the meal. The presentation is beautiful, looks as pretty as the picture very easily. I made 14 bundles and it was fun, not tedious. I made them ahead of time & they cooked quickly. I used 7 frozen green beans and 4 strips of fresh carrots for each bundle. I cooked the bundles in a bit of some bacon grease then added water to steam. At the end I added butter, 2 T brown sugar & a spash of soy sauce then spooned over the bundles. Also sprinkled crisp crumbled bacon on top. DELICIOUS!

Cream of Chicken with Wild Rice Soup

Definitely FIVE STARS!!! I loved this! I didn't have wild rice so I used a box of Uncle Bens Wild Rice Blend w/ seasoning pk. plus 1 cup of brown rice. PERFECT! I also sliced & steamed some carrots in the microwave to throw in. I wanted it herb-y so I added some garlic, sage, basil and rosemary. I'll be making it often. Thanks for the recipe, it was just what I had in mind!

Chicken Chimichangas with Green Sauce

I say three and a half stars. I can't put my finger on it but I didn't love these. Hubby is so easy to please, he loved them but he didn't like the green sauce (too much jalepeno). 12 year old didn't care for the cream cheese in them & also didn't like the green sauce. I think it goes back to my aversion of canned soup. Probably just me. They did look beautiful. The fried tortillas were the best part.

Golden Crescent Rolls

This was an easy recipe but I'm sorry to say I didn't love these. I'm going to stick with my other much loved roll recipe. I think the 2 eggs and the shortening make these heavier & more dense than what I usually make. They were fun to make though, thanks for the recipe.

Garlic Mashed Red Potatoes

There is a restaurant in town that makes these & I was trying to duplicate it. This is it! I'm glad I don't have to look any further. They are delicious! I served them with Southern Pulled Pork from allrecipes & it was a wonderful meal! Don't peel the potatoes. Thanks for the recipe!

Crispy Rosemary Chicken and Fries

This dinner qualified me for domestic diva for the day! It was delicious! Buy the fresh rosemary, it's worth it! I used chicken breasts since that's what we prefer. I halved them lengthwise like large chicken tenders. I mixed everything up as directed in step 2 but I baked the seasoned potatoes for 30 minutes then added the chicken to the same pan for the last 30 minutes. Since I was using smaller pieces and white chicken, I didn't want the chicken to dry out by cooking for an entire hour. It was PERFECT! The chicken provided some extra juices that made the potatoes to die for. I'll be making this again soon. We all loved it!

Mom's Macaroni and Cheese

I'm not a big fan of mac & cheese so I can't believe I'm giving this 5 stars. It's yummy & my family really enjoyed it. I'm having the leftovers for breakfast! I added an extra 1/3 cup shredded cheddar to the breadcrumb topping.

Chicken Pot Pies with Puff Pastry

I LOVE chicken pot pie but I'm sorry to say I was disappointed in this one. The swiss cheese just didn't go with it at all. The puff pastry was still doughy even after 5 extra minutes of baking. The filling wasn't spectacular either. Hubby is the only one who ate his entire serving. I did like the cooking method of individual servings baked in separate bowls. The puff pastry was a nice idea but it didn't cook on the bottom enough. I was hoping for something much more.

Asiago Sun-Dried Tomato Pasta

G-O-U-R-M-E-T!!! This was delicious! I could have drank the asiago cream sauce by the glass for starters. I made a few changes & it was perfect. I'll be making this for company soon. I added basil, freshly ground pepper & extra cheese to the sauce. I used much less than 1 cup of sun-dried tomatoes. I wasn't sure if I liked them or not so didn't want a bunch. I probably used 1/3 cup & it was perfect. I also omitted the red onion since I don't like cooked red onions and used 8 ozs of fresh mushrooms sliced instead. YUM! The last cup of heavy cream I switched to 1 cup 1% milk. I never need to eat out again. This is better than anything at Olive Garden--seriously! Everyone at my house loved this!
