Cocktail Meatballs II

I made these with gluten-free bread crumbs, for my husband who has celiac disease and they were wonderful. No one knew the difference. The only changes I made were that I baked the meatballs for 20 minutes to brown them and then placed them in the Crock-Pot for 3 hours. I also added a can of cranberry sauce instead of the grape jelly.

Aunt Teen's Creamy Chocolate Fudge

This fudge was really good. Better than many that I have bought at chocolate shops. It does not have that fake chocolate taste like many fudges I have made. It would also make a very good fudge icing. VERY good!!

This coleslaw was extremely pickely and that is saying a lot because I like pickles. Something about the creaminess, and sweetness along with the pickles did not agree with my tastebuds. To me, the ingredients did not mesh together well.

I used buttermilk in place of milk, added a little onion powder, slightly more black pepper and I also added homemade salsa that had cilantro in it. The taste was just what I was expecting. Worked great over spinach leaves.

Ground Chicken Gumbo

Unfortunately, this recipe as it is is very bland. Please don't make this expecting authentic New Orleans results because you will be disappointed. Needs more kick. The tsp of cajun seasonings must get absorbed up in the rice and/or diluted in the chicken broth. Whatever, the case I won't be making this one again.

Fried Okra

Loved it! Fried okra is supposed to have a gritty texture (which this did), but I did add about 1/4 cup of flour. I also added way more salt and especially pepper and onion powder, as I love flavor. I added a small amount of milk to the egg (as others mentioned) and let the thawed frozen okra soak. I then added the okra to the dry mixture and added to the hot oil with a slotted spoon. These were great in ketsup like we have at Cracker Barrel.
