Vietnamese Fresh Spring Rolls
A good recipe. Be sure to NOT get the tapioca wrappers as they are much harder to work with. Besides that, these are a real crowd pleaser and very fresh tasting.

Cranberry Sauce with Raspberry Vinegar
Easy, tasty, and even the leftovers are great on toast. My wife doesn't like cranberries but loves this.

Greek Style Potatoes
Fabulous, although I used red potatoes and cut them into bite sized pieces, which reduced the roasting time to 60-90 minutes. Also, uncover after about an hour to allow the liquid to evaporate a bit.
