My husband, 3 children and I live in Nairobi, Kenya where we pastor a church. It's been a challenge to cook here, not having all the conveniences and products from the States, but I have learned so much. Mostly I've learned how to cook from scratch rather than depending on the ready made items. It's been time consuming but I've also realized how much I enjoy it cooking for my family.
My favorite things to cook
We love a variety of foods. Right now I've been making chicken noodle soup, lasagna, tomato soup, quiche, African curry, almond chicken casserole, plus other favorite family dishes. I also enjoy baking. I like having homemade cookies ready for the kids when they get home from school. Smoothies are also an after-school favorite.
My favorite family cooking traditions
Of course Thanksgiving and Christmas are at the top of our family traditions. We're all in the kitchen doing something...it's a family affair!
My cooking triumphs
It was definitely a challenge at first to cook anything. The first month in Kenya we didn't have anything with meat because I wasn't sure it was safe and I didn't know one cut of meat from the other...intimidating to say the least. Yes, now I've learned and we do eat meat!
My cooking tragedies
Where do I begin! I made macaroni and cheese the second week we were in Kenya and I can't even describe to you how bad it was. The cheese didn't smell like any kind of cheese that I had smelled before. I also made cinnamon rolls that didn't rise correctly...they tasted okay but looked really funny! There's more but I'll stop there.

Teriyaki and Pineapple Chicken
What a great recipe! It was easy and very, very good! I served it over rice. I didn't add the mushrooms because I didn't have any but I loved the peppers...not too many for us at all. I used corn starch instead of flour to thicken it. I didn't marinade my chicken...just cooked it on the stove until cooked through and it was very tender and full of flavor. Thanks for the great recipe! PS - my younger son did think it was a little too spicy, so if you have younger children you could watch how much of the crushed pepper you add. But we liked it!

Black Beans and Rice
This was just the recipe I was looking for! It's a simple, tasty, quick, recipe for black beans and rice. Honestly, I think all the changes people are making to this recipe are just preference. You should make this recipe as is, then decided what you'd like better...tomatoes, no tomatoes, chicken broth, beef broth...that's what makes it a great recipe, you can add or change ingredients to make it fit your family. Very yummy!

Slow Cooker Chicken Stroganoff
Great easy recipe. I doubled it and added just a bit of water to the sauce at the end...it was pretty thick. Added some pepper and served over wide noodles. I did use 1 can of cream of mushroom soup and 1 can of cream of chicken (2 cans because I doubled it). I also only used 1-8oz package of cream cheese and about 1 cup of sour cream. I cut the chicken into cubes, after it was cooked, instead of shreading it...just preference. The chicken was very moist and had a great flavor. My whole family really liked it.
