Roasted the squash split lengthwise face down at 375 for 45 minutes first; makes the skin easy to peel and the squash easy to scoop. And cuts the boiling time down to only about 5 minutes once you add to the chicken broth. I cut the cream cheese in half, I used three cans of chicken broth. PHENOMENAL. I made this for a potluck dinner last month and it was the only soup that was really touched out of four choices - everyone loved it. Roommates and friends have requested it 4 other times since. Super easy to make (about 30 minutes after roasting) and VERY delicious.

My family made this all of the time growing up. For a little more of a chewey caramel flavor, we would melt together 2 cubes of butter and 2 cups of brown sugar to an almost carmelized point before adding in 2 cups of marshmallows and the popcorn (more or less depending on how gooey you like it) We also would add red hots, spice drops, candy canes, nuts, tiny jelly beans, etc, depending on the season and give them as quick gifts.
