Apricot Squares
Strangely addictive. I used a bunch of fresh apricots and two small peaches for this, obviously not boiling but just chopping them up. Kept everything the same except because I had so much fruit I added more flour and baking powder to the egg/apricot part and they came out great. Don't forget to dip the top, sides, and bottoms of all bars in powdered sugar, adds a nice sweetness.

Peach Bread
Excellent. I chopped up some fresh peaches and plums I had to get rid of instead of using canned. Used less cinnamon, and added about 3/4 tsp ginger powder. Also substituted the oil for coconut milk to reduce calories, came out aromatic and delicious. Rave reviews.

Pumpkin Apple Streusel Muffins
This is a fantastic recipe. I will defenitely make again and again. I didn't have pie spice, so I used 1 tsp cinnamon and pressed about 2 tsp of fresh ginger root to substitute. Used about 1 and 1/3 cups sugar which was very sweet, would not use more. Also used full 15oz can pumpkin and two medium apples chopped but not pre-baked. These came out perfect. Streusel was a nice touch.
