I love, love, love to cook and give away baked goods and am always searching for an excuse to give someone a cake or cookies. Outside of that I am getting a handle on cooking main dishes. Most of what I have cooked so far is either vegetarian or chicken dishes--what a combo! Like most people I have way too many but I've always loved Thanksgiving. I come from a small family and every year we tell ourselves we aren't going to make that much. Then at Thanksgiving dinner we look around and there's the turkey, stuffing, cranberry sauce, rolls, some corn, sweet potato casserole, some random jello thing, and as if that's not enough a pumpkin and chocolate pie. Successfully making my very first dinner...only thing bad about it was it took me two hours for 8 enchiladas! eewwwww! Has to be the Baked Dijon Salmon from this site. All I can say is that the cat sure was happy!
