Pumpkin Muffins II
Very good muffins - I made it with canned pumpkin and some leftover butternut squash. I also used 1/3 c. oil and 1/3 c. applesauce rather than the full amount of oil. I substituted 1/2 whole wheat flour and used white flour for the rest. I only used 1 c. sugar - 2 is much to much. They were delicious but a little dense from the whole wheat flour but it was worth it.

Pleasant Pork Chops
I made it with the onions and garlic cooking with the chops, in the electric skillet. Browned the chops but they were thin, so I didn't cook them very long - about 10min in the broth (and sherry). I've done a similar recipe where you add a bit of tomato paste and some dijon mustard to the pan sauce while reducing which I think has better flavor. I've also done a version with apples and dijon mustard. I added very little lowfat sour cream and served the chops with mashed potatoes and a veggie. It was good - but nothing extraordinary. Next time I will cook the chops longer so they are more tender. Good basic recipe.

THE Pasta Salad
I thought it was ok, my husband liked it, my kids didn't (probably because of the mustard). It was a smidge dry, but we like it that way - if you want it creamier, I'd increase the dressing by 1/2. I made it with just peas, added dill, dried minced onion and garlic powder. It would be good with tuna too - needs a splash of lemon juice or something to give it more zip.
