Pickle Rolls

Especially for those reducing their carb intake, but even if you're not, these are really tasty without the tortillas. Great to pack in a zipper bag to take for a snack. Without the tortilla and using the right sliced ham, these can be low fat and a great source of protein!

Gravy Baked Pork Chops

Well, this was definitely easy! I had 2 very thick chops, so I cut them in half so they would cook in the time alloted. I did as some suggested and sprinkled the chops with Old Bay seasoning and garlic powder (in lieu of actual garlic). After browning, I added a can of drained mushrooms to the pan and sauted. I used cream of celery, since I had no cream of mushroom. Added the mushrooms to it 1/2c each of milk & water. The chops were tender and the gravy was nice. Not a spectacular meal, but certainly good enough to make again. Thanks Jennipoo for another way to make pork chops!

Pumpkin Bread IV

This made 2 regular sized loaves, 1 medium loaf & 3 mini loaves. The texture is good. I did use 1/2 cup apple sauce in place of 1/2 cup of oil and 2 cups white sugar + 2 cups Splenda, to cut down on some of the calories & fat. I did not have the cloves, so I used the 1 1/2 tsp of each spice and then added 1 1/2 tsp of pumpkin spice. I sprayed the pans with non-stick cooking spray and then dusted them with cinnamon/sugar mixture. I used one of the mini loaves to sample. Nicely flavored sweet bread. I can't wait to give these as gifts!

Awesome Sausage, Apple and Cranberry Stuffing

Made this last Christmas and really enjoyed it. It took a little getting used to, since I've been making cornbread dressing for both Thanksgiving & Christmas. This was a really nice change and very festive with the apples and cranberries.

Cranberry Fluff

My mom made this salad for every Thanksgiving & Christmas dinner for as long as I can remember. Now I make it. It's tradition. If you like it sweeter, use a little less cranberry and add more marshmallows. Also, be careful what you eat/drink with it. If you drink sweet tea (or any other sweetened drink) and then eat some cranberry fluff, it will make your mouth pucker because it will be very tart. As long as you avoid sweeter foods, this salad will taste awesome!

Pecan Pumpkin Pie III

I really was not thrilled with this pie. I followed the recipe except I left out the lemon juice and rind, as others suggested. It just did not taste like pumpkin or pecan pie. I was hoping for the best of both worlds, but didn't get anything that I really liked. I think I'll try using my own pumpkin pie and pecan pie recipes and try to combine them.

Chili Mac Casserole

This was pretty tasty. I did not have 2 cans of diced tomatoes and tomato paste, so I used 1 can diced tomatoes and 1 can of tomato sauce, which worked well. I also added more chili powder & cumin and added worcestershire sauce to suit our tastes. I always substitute ground turkey for ground beef. These changes made it more like the chili I make. Will make this again.

Southern Dirty Rice

This was really good! I had dirty rice in a cajun restaurant at Bricktown in Oklahoma City and wanted a reciped that tasted like theirs. This one came very close. I followed others suggestions and made a substitute for the livers & gizzards using ground turkey and added a little ground pork sausage. I also added some Tony Chachere's creole seasoning. I didn't top with the green onion, as I had none. I will make this again.

Scrambled Egg Brunch Bread

I made this for a breakfast at church and it was well received. I followed luv2run's advice and made it the day before and froze it. It only took 35 minutes to bake since it was only frozen for 7-8 hours. It looked and tasty great! I will definately make it again with variations. This would make a great dessert bread using apple pie (or other fruit) filling and after baking, add a glaze. Thanks Julie for sharing this wonderfully easy, yet elegant bread!

Mini Mexican Quiches

I'm only rating it 4 stars since I didn't actually taste these. I took these to my church and they were gone before I had a chance to sample them. I did get compliments. It was nice to have a finger food for breakfast that was hearty and not sweet, like all the other things being served.

Roasted Potatoes with Greens

Very tasty and nutritious. I really enjoyed the combination of potatoes and spinach. I added more spinach since DH and I both like it. This my first time to use fresh rosemary and it added a very nice scent and flavor. I think I would like a bit more garlic. The spices did not overpower the veggies. This made a lovely side dish for the Filet Mignon with Rich Balsamic Glaze on this site.

Parmesan Puffs

These turned out very well. The texture was perfect, soft on the inside and slightly crispy on the outside. I used a whisk to combine the flour with the milk/margarine which combined it well, but had some trouble getting it out of the whisk. Then I took it off the heat and pushed the mixture to the side. Added the eggs to the side of the mixture, whisked them and then mixed it all together. Worked very well. These made a lovely appetizer for our Valentine's Day dinner. Thanks for sharing!

Filet Mignon with Rich Balsamic Glaze

This was quite good. I followed the recipe as written and found it to be wonderfully juicy and the sauce was good. It did not overpower the meat. I served this with Roasted Potatoes with Greens and Simple Feta Salad from this site and the flavors really complemented the other dishes. Used Parmesan Puffs served with marinara sauce as an appetizer and Bananas Foster I for dessert. Made a lovely Valentine's dinner for my darling hubby and me!

Caramel Bars

These are really good and rich! I found the Kraft brand caramel bits, which worked great and used milk instead of cream. I weighed 32 regular caramel squares and found that they weigh 8 ounces. So I used 8 ounces of caramel bits (~1 1/4 cups).

Super Sausage Gravy

I have been wanting to make sausage gravy like my mom's, and this one is it. She didn't need measurements, but I sure do! This was great!! Only change was to double the flour & 3 cups of milk to make more gravy for the amount of sausage. It thickened up so nicely. Wonderful gravy, now I just need to find a biscuit recipe like the restaurants serve. Yummy!!!

Veggie Pizza

This was very good and colorful. I didn't use celery or radishes. To save time, I bought a bag of julienned (matchstick) carrots. In addition, I used a yellow sweet pepper (diced), broccoli, cauliflower, green onion and grape tomatoes (sliced). It was so pretty & tasty, that all the ladies at my painting group raved! I really like the cream cheese/sour cream mixture. Be sure to use the dill, as it really makes the dish!

Seven-Up™ Pound Cake

This recipe is very similar to the one my mother makes. Her's calls for 3 cups sugar, 5 eggs and 1/2 tsp almond extract instead of vanilla. Everything else is the same. It is a very light flavored cake - just right for the summer. Great topped with fresh/frozen strawberries or peaches mixed with sugar to form a glaze.
