About this Cook
I've really only started cooking on a consistant basis since I've been married. My mother, who is a wonderful cook, did the majority of the cooking when I lived at home. Since my husband is a Type I Diabetic, I have tried to find low carb, sugar-free and heart healthy recipes. Of course, I still crave comfort food, which is difficult to make health and maintain the flavor. I enjoy trying new recipes. Now I'd like to find healthy recipes that my 2 picky-eater grandsons will eat without a fuss.
My favorite things to cook
I enjoy finding nutritious, tasty fun meals to cook. I like to take dishes to share at work, reunions, etc. The ones that get rave reviews become favorites in my book!
My favorite family cooking traditions
Our only food traditions are hot dogs and lemonade for Independence Day and turkey with all the trimmings for Thanksgiving and Christmas.
My cooking triumphs
I consider anything that looks and tastes good as a triumph. Thankfully, I've had many triumphs under that definition. I guess the biggest triumph at this point was my mother asking for one of MY recipes. ;)
My cooking tragedies
When I 1st got married, the stove in our house was in terrible condition. I didn't know at the time that the oven was running at least 25 degrees F above the setting selected. So needless to say, some of my 1st baked goods were less than great. They would be totally browned on the outside and still be gooey on the inside. Then more recently I was trying to bake some muffins for a sunday school brunch. I added a few extra ingredients to enhance the muffins a bit and in the process forgot to put the baking powder and baking soda in them. They were pretty solid muffins, indeed!

Pickle Rolls
Especially for those reducing their carb intake, but even if you're not, these are really tasty without the tortillas. Great to pack in a zipper bag to take for a snack. Without the tortilla and using the right sliced ham, these can be low fat and a great source of protein!

Gravy Baked Pork Chops
Well, this was definitely easy! I had 2 very thick chops, so I cut them in half so they would cook in the time alloted. I did as some suggested and sprinkled the chops with Old Bay seasoning and garlic powder (in lieu of actual garlic). After browning, I added a can of drained mushrooms to the pan and sauted. I used cream of celery, since I had no cream of mushroom. Added the mushrooms to it 1/2c each of milk & water. The chops were tender and the gravy was nice. Not a spectacular meal, but certainly good enough to make again. Thanks Jennipoo for another way to make pork chops!

Pumpkin Bread IV
This made 2 regular sized loaves, 1 medium loaf & 3 mini loaves. The texture is good. I did use 1/2 cup apple sauce in place of 1/2 cup of oil and 2 cups white sugar + 2 cups Splenda, to cut down on some of the calories & fat. I did not have the cloves, so I used the 1 1/2 tsp of each spice and then added 1 1/2 tsp of pumpkin spice. I sprayed the pans with non-stick cooking spray and then dusted them with cinnamon/sugar mixture. I used one of the mini loaves to sample. Nicely flavored sweet bread. I can't wait to give these as gifts!
