Cottage Cheese Chicken Enchiladas
I thought this was quite delicious. This was a great way to use leftover roasted chicken. Unfortunately my husband saw the cottage cheese and refused to let me put it into his tortilla, but I'll sneak it in front of him in the future. Will definitely make again.

Iced Pumpkin Cookies
I was disappointed with this recipe... and I so wanted to love it. I think the flavor was quite good, however the texture was not as moist and chewy as I expected.
