I once tried making mashed potatoes with white long potatoes!! when I finished with the hand mixer after adding sour cream, milk, and lots of butter they looked more like whipped white american cheese they even had strings like mozzarella on pizza. we had to toss the whole batch. and then there was the brined turkey legs (gag) I thought i was sucking on driftwood from the Dead Sea!

Rum and Sweet Potato Casserole
When my husband and I tasted this we looked at each other and knew that I'd never have to search for ANY OTHER sweet potato casserole recipe ever. This is THE ONE. I'm southern bred and I can say this one knocks all the other casseroles of the potluck (or turkey day) table.

Sweet-and-Sour Meat Loaf
I am NOT a vegetarian but I'm just not familiar with cooking meat. This is so easy and so good. My husband says I'm well on my way. Super quick in the microwave. I love the kick the vinegar adds.

Apple Pork Chop Casserole
BIG HUGE RAVES from HUBBY, little munchkin liked it as well. I doubled the recipe, and used 4 chops. I did however follow the water amount called for on the back of the stuffing box(used the whole box) since i was afraid the dressing would turn out soggy, I used one can of cream of mushroom. I was worried i wouldn't like the raisins (and my husband hasn't ever liked cooked raisins) but we love love it. He's comparing it to Sunday pot roast (all time fav.) Our one thing is we think we'll use more than one box of stuffing next time. THis is going in the recipe book. Thank you.
