Pretzel Turtles

My mother in law made these once - without the extra chocolate drizzle on the top. She used Rolo candies and they were WONDERFUL. She does weight watchers and said they were only one point each! So they are a nice snack, assuming that you don't eat 10 at a time! Which is very well something you may want to do.

Warm Goat Cheese Sandwiches

My husband LOVES these. He still makes them as a snack often. He likes to experiment with stuff to put in them. Most of the time, he leave it just the way it is.

Love this recipe. My favorite pasta. Of course this needs to be adjusted for your tastes with the goat cheese, and I always add chicken.

Love these. Love capers! It also tastes really good if you make extra, heat it up and pour it over your chicken too!

Oven-Fried Potatoes

Reviewed: jan. 3, 2009
I love these potatoes. I don't follow the recipe too closely. I normally make extra coating - making sure they are completely coated - and then coated again. I also use only a little bit of oil. The great thing is, you can adjust as you need for your tastes.

Bruschetta II

Awesome, awesome, awesome! I was taking this to a party so I couldn't stack it up like it suggested. Instead I mixed the pesto together with the tomatoes and cheese and served it with the toasted baguette pieces. It was FANTASTIC! It think my husband and I ate the entire bowl ourselves!

Asparagus and Smoked Salmon Salad

Reviewed: sep. 5, 2008
Great salad! It wasn't as good as it could have been because I didn't cook the salmon completely (but that was my fault - not deducting for my stupidity). The only qualm I had with this recipe was the salt content in the dressing. Made it a bit to salty - maybe next time just a pinch, and it needs some kind of cheese. We used crumbled feta, it worked fantastic.

Broiled Tilapia Parmesan

I took others advice and added bread crumbs. It turned out good. I am just starting to eat fish, so it was good for a beginner! My husband absolutely loved it!!!

Grandmas Chicken Chardon

Reviewed: aug. 8, 2008
Holy moly this was great! I did it a little different. Sliced some red potatoes and layered them on top of the mushrooms, poured the butter mixture on top of those (used half the amount of butter). Coated the chicken in the mixture and placed on top, then sprinkled remaining coating mixture on the entire thing. Covered up with foil half way through (didnt want it to dry out - and the potatoes needed a little help cooking). Anyway, it turned out FANTASTIC! I will definately make this many more times.

Pesto Chicken Florentine

Wow.. 2 of my favorite things. I never thought to put them together. I omitted the spinach because I didn't have any at the time and I used jar alfredo sauce (my favorite kind). It was fantastic! We had a couple of friends over and they inhaled it too! Defintely a keeper.

Simple Ranchy Breaded Fish Fillets

Reviewed: jan. 18, 2008
Yum... I really liked the flavor of this fish... I made a couple of little changes. 1. I used Cod instead of tilapia; 2. I didnt use the whole packet of ranch - I reserved a little bit and sprinkled it over some sauted asparagus. It went great with the fish!

Classy Chicken

I will definatly make this again. It had nice flavors and was fairly easy once I figured it out. The only problem was, something was missing! It didnt have a very distinct flavor - not sure what it was, but I will definatly experiment with it for next time!

Michelle's Blonde Chicken Chili

Reviewed: jan. 2, 2008
Okay, so I really modified this recipe - but the core flavor is what I give a 5 stars. I dont like most beans - so what I did was substitute the beans with just ONE can of rinsed black beans and added 2 cans of FF chicken broth. This produced quite a bit of liquid so I thickened it a touch with some flour. But the way the flavors mixed together were fantastic! I really enjoyed this recipe and will definately make again.

Pork Chop and Feta Skillet

Reviewed: dec. 14, 2007
Definately loved these! Then again, anything with feta is fantastic! We made the recipe as-is and it had wonderful flavor. TIP: After removing the porkchops from the skillet, mix in about a tablespoon of water and a teaspoon of lemon juice to the skillet and stir around the drippings - heat to a boil... and then pour that into some already cooked white rice. It is a GREAT side dish with all the flavors of your pork chops.

Not really impressed. It was good, but one can of tuna and 8 ounces of cream cheese? I used half that, and it was still a bit to much.

Gorgonzola and Apple Pork Chops

Reviewed: nov. 10, 2007
Wonderful taste. I however like to put it on top of the pork instead of stuffing it, but I find cooking butterflied peices of meat a little harder to work with! I cooked pork in olive oil, fresh garlic and put a little bit of dried rosemary on them during cooking. Gave the pork a little something extra. I also added the sugar and a bit of ff cream cheese to keep the gorgonzola from stiffening once it was out of the pan!
