About this Cook
I am a Navy wife and a mother to 3 girls ages 10, 3 and 5 months! I am currently a nursing student as well and will one day become a nurse anesthetist. With my husband being in the Navy, we move around quite a bit, but honestly, I don't mind. I think it is fun and you get to meet lots of new people! I enjoy cooking a lot but it hasn't always been this way. I think because my husband loves my food, that it has become more of a joy than a chore. My husband and I like to cook "gourmet" once a week together to learn some new techniques and enjoy different types of food. My favorite thing to do though is bake. I have been doing it by myself since I was 10 years old. I learned a lot of what I know from my grandma! I think I enjoy it even more though, because I have quite the sweet tooth. Baked goods always make everyone happy :o)
My favorite things to cook
Tortilla soup, chocolate chip cookies, casseroles, chicken/pasta dishes, tomato soup with grilled cheese sandwiches (with many different varieties of cheeses - no american slices here), Mexican food because I just happen to be good at it.
My favorite family cooking traditions
Baking as a child with my grandmother. I loved this growing up and she instilled the love of baking into me. I am just starting this tradition with my 10-year-old daughter.
My cooking triumphs
I can't really say though I am quite pleased that my husband thinks I am a great cook - I never really thought of myself as this!
My cooking tragedies
The fondant recipe on this site - Oh gosh! This was a nightmare in everything that came with it. I also am not too good at making any sort of dough product whether it be breads, pie crusts, etc. I have no idea why, but I can never seem to get it down right. I tried the "Diners' Drive-in's and Dive's cookbook "Blue Ribbon Cinnamon Roles" and even with using my KitchenAid, turned out into a huge mess and the most doughy rolls I have ever had - YUCK! It seemed easy but apparently I don't have a knack for yeast doughs or pie crusts. Hopefully done day though....

Easy Decadent Truffles
I thought this recipe was great and super easy to make. We rolled ours in nuts, unsweetened chocolate powder and sprinkles. They turned out wonderfully and our guests enjoyed them!

Chicken Scampi II
This is a great recipe. I have made this quite a few times. The differences I make are more for our own personal preferences and we like it better than the original, but we do add a green and red bell pepper diced, a can of corn, white wine - about a 1/2 cup and at the end, we toss in some parm cheese. I think the recipe is an excellent starter one that you can tweak very easily to your own liking. I also like to add in some red pepper flakes and some additional lemon juice. I end up heating up the oil and butter together with a diced onion garlic, tossing in the chicken breasts that I diced up, then a few minutes later add in all of the veggies, herbs/spices, lemon juice and white wine. I let it simmer for about 15-20 minutes while I get the pasta ready. When the pasta is ready, dump in the chicken mixture, toss in some parm cheese and serve. I highly recommend this to anyone!

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever
I actually think these are better than the cookie dough filled ones but maybe it is because I made my cake batter from scratch. I think this recipe is great because it gives you infinite possibilities. You could use chocolate cake with chocolate/peanut butter brownies and PB frosting or anything else you can imagine! I do recommend, as someone else mentioned, using the Ghirardelli brand brownies as they have a much more "home made" taste as opposed to other brands. I did make a chocolate cake batter from scratch and that was the only change I made but these turned out so good! I will be posting pictures soon!
