Shrimp and Okra Gumbo

This was really good. I changed the recipe a bit, but I'm still rating it five stars because it was so awesome. I eyeballed almost all the ingredients and amounts. Used three cups of water. Only cooked shrimp 'til they were cooked -- this will only take literally a couple minutes if you've got a good simmer going before you add them -- just make sure they're opaque. I added some Cajun-spiced sausage -- yum. Added some "random" spices. Also didn't put green onions in because I didn't want to buy them and have a bunch leftover that I wouldn't use in something else. Delicious!

Roasted Potato Cauliflower Pasta

This was really good. I would probably not use quite so much olive oil next time -- just a taaad less. I only made the cauliflower and potato portion of this, and didn't have onion or rosemary, so it was modified slightly out of necessity. But I would definitely recommend.

Perfectly Pasta Salad

This was really good. I used an organic Italian dressing instead of Caesar, just due to personal preference. Otherwise pretty much followed the recipe to a T. Thanks for sharing!

Oven Fried Chicken III

This was really good. Used chicken breasts only and cut into tender-sized pieces. Used some alternate cooking times. Brushed on mayo so as to use very little, just enough to let bread crumbs stick. Flipped halfway through cooking time. Very yummy!

Easy Beef Stroganoff

This was really good. I read some other reviewers' comments and included some garlic at the end of sauteeing the mushrooms and onions, and also added some worcestershire sauce while cooking the ground beef. I eyeballed the flour and beef broth amounts, and added more of both as I felt was needed. I used low fat plain yogurt instead of sour cream. The sauce had a nice, thick consistency and was really yummy.

Stuffed Eggplant with Shrimp and Basil

This was pretty good. I really enjoyed the 'stuffing' part -- the shell of the eggplant wasn't very good to me, but maybe I don't like eggplant as much as I thought. I added mushrooms, onion, and red pepper to the stuffing mixture, and used a little less bread crumbs. That part was really good.

Brazilian Black Bean Stew

I made this for dinner (and dinners all week!) last night, and I couldn't think of a reason to rate it less than five stars. Here are some things I did a tiny bit differently: -A tiny bit of EVOO (instead of Canola) -I bought Habanero and Green chile turkey sausage -Did not use ham -Used fresh roma tomatoes from a friend's garden, instead of canned (tried to reserve as much juice as possible) -Added a diced, seeded habanero and red chile pepper (it actually didn't end up too spicy, although my nose was running a bit!) The stew was so yummy, and so colorful and pretty to look at! I noticed someone had trouble with the sweet potatoes softening fast enough -- just make sure you dice everything in small, bite-sized pieces and you won't have a problem with that. This was SO GOOD. One of the all-time best recipes I've made from this site.

Watermelon Fire and Ice Salsa

Maybe I ruined the recipe by adding an extra jalapeno and another fresh hot pepper from my friend's garden, but it was way too spicy and strange-tasting, and I love spicy food. No one really got into it at our fourth of July get together. I think it might have been better, however, on fish or chicken than with chips. (And really it's my fault for making it too spicy.)

Bacon-Cheddar Deviled Eggs

This was pretty good. I don't LOVE bacon so it wasn't my thing (four strips may be a little much). However some other people at our fourth of July get together thought they were great, so if you love the ingredients I say it's worth a shot. I used spicy mustard instead of honey, based on what I had, and added green onions because I had some leftover from another recipe. Overall just okay. Too bacon-y for me.

Fiesta Pinwheels

I made these for a baby shower we had for someone at work. They were a big hit! My boss had some and told me later "whoever made those cheese roll-up things did a great job!" I used diced red pepper instead of green onion because the onions at the store were awful looking. Delicious!

These were really good. I forgot to put the cheddar cheese in, but still delicious. I do think that the amount of cream cheese was too much for four large tortillas -- I would have preferred it spread a little more thinly on maybe five.

Baked French Fries I

These were really good -- I had no complaints last night! I did add some sea salt and ground black pepper. I cut mine in wedges and cooked them just a little longer than 45 mins (they were cooked through but still a bit soft and not yet crispy at 45). Everyone liked them. I definitely recommend.

Scrambled Egg Muffins

I cooked breakfast for a few friends this morning and was trying to think of something to do with eggs, green pepper, and onion. Voila! I had lil Smokies on hand, rather than the typical breakfast sausage, but those diced up worked just fine. Everyone loved these and they were SO easy to make for a group! I served them with optional sides of ketchup, salsa, or hot sauce.

No Bake Cookies I

For once I was trying desperately to follow this recipe exactly so I could give it a fair rating! Unfortunately, I discovered I didn't have any vanilla extract, so I had to substitute almond extract. I think these were still delicious. They are definitely SWEET. Don't expect otherwise and you won't be disappointed!

Awesome Chicken and Yellow Rice Casserole

I honestly did not think this was that amazing. It could have been heated together on the stovetop, no need for the Dutch Oven or the casserole dish. If I could make it over again, I would use only breast meat, but that's just a personal preference. Overall, this was just kind of "there" to me -- not great but not bad either.
