This is one of the best recipes I've come across! I substituted natural applesauce (an equal amount) for the melted butter. I added 2 Tbsp. of vegetable oil as well. These turned out perfectly. I made 6 mini-loaves (though the batter just barely stretched for that). I will definitely back a double-batch next time!
