Mayan Couscous
This was good. It was REALLY good before adding the lime/oil "dressing." The amounts are way too much, I think. I used 2 T of lime and oil, and it still made my couscous mushy. Also, I used 2 cloves of garlic, and could have used more.

Sweet Potato Minestrone
I thought this was okay. I enjoyed enough for a serving or two, but was less than excited to eat it for a couple more days (makes a HUGE batch). I added 1 can of garbanzos, which I didn;t think would make that much of a difference so I didn't sdjust the liquid. It turned out more like CHUNKY vegetable stew. I like veggies a lot, especially sweet potatoes, but if I make this again I might half the recipe so I am not stuck eating it for days. I would give it 3.5 stars if I could.

Black Bean and Couscous Salad
Awesome and easy and healthy. Can eat this for lunch all week. I too added cucumber and feta cheese. My limes didn't produce much juice so I think I ended up with less than 2 T, and I def wish I had a little more juice in it, but its still great.
