Pizza Dough III

Sorry, but this recipe was terribly disappointing. It needed an additional 1/2 c flour to even make it manageable and the outcome was, well, disappointing! I worked it as thin as possible without tearing but still it baked up wrong. SUPER bready & thick. Maybe that's the way it's supposed to be, but not to my taste; sorry!

Chipotle Shrimp Tacos

deeeeee-licious! I added about a teaspoon of cumin to shrimp mixture to kick up the mexican-y-ness. I also mixed in the chopped fresh cilantro. I served my tacos with lt. sour cream, chopped onions, MORE chopped cilantro, and sliced avocado. Kids (3 & 6) and hubby LOVED this meal. Although it is firmly ensconced in my 'yummy-box', I am going to try it with HALF the bacon so's I don't feel guilty about serving it (often) to mi familia... Thanks rvelasquez.

Chicken with Chipotle

This recipe was simple, quick, and super tasty. I made changes according to my ingredients on hand: used lo-fat plain yogurt instead of sour cream, boneless skinless chicken breasts (about 8 halves)instead of leg quarters, extra adobo (yum), and forgot the margarine completely. Instead of roasting the chicken, I cut the breasts into 1 inch pieces and browned them on the stovetop in a bit of olive oil. From then I followed the recipe instructions & served on brown rice. Really flavorful, healthy, AND it couldn't be simpler! Thanks so much for the recipe, Guera!

BUSH'S® Nacho Average Nachos

Even though I changed a few minor things, I still ENTHUSIASTICALLY give this recipe 5 stars! My husband and I fought the whole way on this recipe. He was HORRIFIED at the thought of nachos with SPINACH and NO CHEESE. Those, of course, are the reasons why I was drawn to this recipe in the first place! So we compromised a bit. I used only 1 cup of broth (to make it less soupy) and instead of 'wilting' the tortilla chips in the chicken mixture, I TOPPED the chips with it (DH hated the idea of 'soggy nachos'). Also, I used a can of stewed tomatoes (mexican style) instead of regular whole. I added a bit of shredded muenster cheese to appease the hubby (I didn't miss it AT ALL). DH, usually lukewarm at best, loved this recipe (wow). Next time, to increase the nutritional value even more, I'll try baked tortilla chips, add another can of beans, and even more spinach (don't tell my husband!). Also, my kids (4.5 & 18 mos) devoured it. I couldn't be happier with this recipe and would recommend it to anybody...

Curried Coconut Chicken

Surprisingly great! Other than using 'lite' instead of the full-fat coconut milk (oh, and thickening at the end), I stuck to the recipe exactly. Served in a bowl over brown rice. The next day I added peas to the leftovers for xtra health. Very tasty! My sons (4.5 & 18 mos) loved it. To my OWN PERSONAL bowl, I added both a dash of cayenne AND a generous squirt of sriracha (I LOVE hot food)... Dee-lish.

Cuban Goulash

Born & bred in Miami, I was skeptical about this dish, even as I served it up. HOWEVER, with just slight tweaking, my family and I thoroughly enjoyed it! Tweaks: added cumin (a must for authentic cuban flavor), used 3 (10oz) cans of Rotel diced tomatoes. Also, my bananas were slightly green. Yum-a-licious, seriously! The tweaks kept me from giving this a 5* review...

Shrimp Etoufee III

Flavor is outstanding (even better the day after). I made 2 changes: I used half shrimp and half crawdads, and used butter instead of margarine. It was Dee-lish. However, the recipe as written is a little soupy for our tastes; we prefer a sturdier etouffee.. (but it was nothing a little extra cornstarch or wondra couldn't remedy). I think I AT LEAST doubled the amount of cornstarch for a thicker consistency. A highly recommended recipe!

Argentine Chimichurri Bread

I honestly can't IMAGINE that anyone could be disappointed in this bread, it is truly phenomenal!! I add extra garlic (4 cloves total) but otherwise stick to the recipe exactly. YUM! Everyone in my family looks forward to 'leftovers night' ever since I started baking this bread to accompany it. I let my bread machine do all the work (kneading & both rises) & then transfer to a bread pan to bake in the oven (30 minutes at 400 degrees)--I just prefer the shape of oven-baked bread. Any doubts, ignore them! You won't be sorry.
