About this Cook
Most of my cooking skills were learned whilst living in Kenya. The diversity of people and cultures was uniquely reflected in foods. Fruits and vegetables were had from the fresh markets, which along with providing us the necessities for life, were full of living colour. I marveled at how spices and grains were milled on a daily basis.
My favorite things to cook
Being vegetarian, but NOT of Asian origin, we have a passion for Indian Vegetarian food. In as far as there are a multitude of different Indian communities within Indian, and Africa for that matter, there are also a variety of Indian cuisines. I am still in the learning process as there is so much to learn and experience.
My favorite family cooking traditions

My cooking triumphs
Learning to cook in the first place ! My friend who was a master chef taught me how to use spices to achieve not only flavour dynamics, but also what aided in digestion and promoted various health / bodily functions.
My cooking tragedies
Having achieved the status of being a "brilliant cook" and "master baker" amongst my friends, I once baked a carrot cake for one friend's birthday party. At first everyone marveled at how delicious it was ... my other friend and I started picking around at the center of it and realised that the batter was so heavy it had not baked in the middle. It was awful. This friend fortunately had a great sense of humour and asked round the table if everyone was enjoying their "batter". The outer edge of the cake was baked and tasted great. Her comments broke the ice - as the guests had already heavily committed to what a wonderful cake it was. Thus, everyone was able to freely make fun of the diasaster and not have to choke down a wad of batter ! ;-)

Rosemary Roasted Turkey
Being a vegetarian - but a darn good cook, I knew I needed a flavourful recipe for the turkey lovers. This turned out perfect. For convenience sake, I roasted it in a oven bag and without changing anything, it turned out very moist. Follow the roasting instructions on the bags if using them. The turkey lovers liked this a lot and it was perfect for me as I can not, more like will not, taste the finished bird to know otherwise !

Awesome Sausage, Apple and Cranberry Stuffing
Being a vegetarian, I substituted the vegetarian burger crumbles for the turkey sausage and miso broth for the turkey stock. Otherwise, I followed it to the "T". This recipe was nothing short of excellent even with the substitutions. Everyone loved it.

Brazilian Black Bean Stew
This is a perfect recipe for novice cooks, or in my case, Dad giving Mom the night off. We could not find a ripe mango and instead used diced canned peaches - drained and rinsed. The end result was perfect. You can actually taste the "layers of flavours." Being that the tomatoes were watery, "Dad" used a potato masher and mashed apx one quarter of the stew then mixed it with the rest of the pot to get that more stew like consistency. We also found that the longer the stew sat, the more the flavours incorporated. You may want to consider making this ahead and letting it set for awhile before serving. It is very filling and a meal in itself. Being that the flavours are very complex, we recommend eating with a crusty / Artisan bread and forego any type of sides. We will DEFINITELY be making this again.
