Black Beans and Rice
My husnand was unsure about this dish but after he took one bite he couldn't sstop raving about it. I did as others had suggested and used salsa instead of tomato sauce. I also added hot sauce (3-4 shakes) and some fresh cilantro (about 2 tbsp).

Banana Crumb Muffins

BBQ Tuna Fritters
These are really good, we make them into tuna burgers. When they are almost done cooking I add a slice of tomato and a slice of cheese on top and cover it so that the cheese melts on the burger.
