Amish Breakfast Casserole

Reviewed: Sep. 19, 2009
Fabulous! I substituted chopped broccoli and fresh mushrooms for the bacon, added spices (garlic and chili powder) and reduced the cheese slightly. Got an A+ from the whole house, omnivores, vegetarians, kids and adults. Will be my go-to recipe for breakfast casseroles. ~nyx

Smoky Chipotle Hummus

Excellent-delicious and easy! My first attempt at homemade hummus. Have made it twice now, and it has gotten great reviews both times. No more store-bought for me!! Thanks

Chocolate-Banana Tofu Pudding

Reviewed: Sep. 17, 2008
This is delicious! Very creamy and smooth; better texture than regular pudding imo. Not too sweet; the chocolate and banana flavors are really highlighted. Served with additional sliced banana and sprinkle of cinnamon. Also got five stars from omni hubby and picky 9 and 12 year olds. Thanks for the post!

Nutty Wild Rice Salad with Kiwifruit and Red Grapes

Reviewed: Feb. 19, 2008
I took a reviewer's advice and added a little garlic and ginger to the dressing. I thought it was really good- my husband loved it. I left out the kiwis because they didn't look fresh in the store. Served it with grilled chicken breast. Great for a light and refreshing meal. We'll likely fix this a lot during warm weather.

Warm Flourless Chocolate Cake with Caramel Sauce

Reviewed: Feb. 19, 2008
I served this cake with strawberry sauce instead of the caramel (blended frozen strawberries with a splash of orange liqueur). Was a huge hit with everyone- got many 'MMMMMmmmm's with eyes closed :) I think the strawberry sauce lightened it up just a tad. The cake is definitely rich and super chocolatey, just as it's supposed to be. A 'must make again' keeper!

Winter Root Vegetables

Reviewed: Feb. 19, 2008
I roasted the veggies too, in a little olive oil, then added the sauce. Used rutabaga instead of turnips (personal preference). I know I changed the recipe quite a bit (sorry), but I kept the sauce as is, and the dish was fabulous!!! My hubby skipped the meat to have seconds (and thirds). Definitely will make again and again.

Spinach Lentil Soup

Reviewed: Feb. 19, 2008
Absolutely delicious! I too was skeptical of the few ingredients (I kept wanting to add stuff...), but they blended very nicely into a flavorful, hearty and filling meal. It's not that often that you find comfort food that's healthy to boot, but this certainly did it for us.

Pleasant Pork Chops

Reviewed: Jan. 16, 2007
This was delicious! I used thick-cut boneless chops and rubbed them with powdered sage along with the salt & pepper. The sage definitely gives it wonderful depth of flavor. Hubby and picky dad absolutely loved it. Very tender and tasty. THANKS for the 'keeper' recipe!!!

Great Pumpkin Dessert

Reviewed: Oct. 27, 2006
Sooo delicious... and easy! I've made this twice now, once with yellow cake mix and once with a spice mix. Definitely prefer the spice but both were wonderful. Didn't have pumpkin pie spice blend so I used cinnamon, nutmeg and allspice. Served with vanilla ice cream. Have been asked for recipe by everyone both times. Thanks so much for sharing!

Pumpkin Burgers

Very tasty- I used ground turkey and adjusted the seasoning to my taste and pantry (added garlic powder, used allspice, nutmeg and cinnamon instead of pp spice). Creative and fun use of pumpkin. Thanks for the recipe!

Slow Cooker Reuben Dip

Reviewed: Sep. 19, 2006
Delish!!! Added a little dry mustard and doubled the dressing as previous reviewers suggested because it was going to sit for a while. Spooned it onto cocktail pumpernickel bread. Great recipe- thanks!!!

Cinnamon-Roasted Almonds

Reviewed: Sep. 19, 2006
Made this for my niece's bridal shower. Used cashews because my niece is allergic to almonds. I added a little freshly grated nutmeg. Everyone loved them, but couldn't taste the spices very well. Next time will add more. Very tasty- thanks!!!

Slow Cooker Lasagna

With reviewer-suggested changes this is definitely 5 stars. I added bottled sauce, sausage and chopped black olives. I also added (thawed & drained) frozen spinach to the cheese layer. Delicious!!! Thanks for the recipe!

Leftover Chicken Croquettes

Reviewed: Jun. 5, 2006
This is a great base recipe; thanks! I also added spices,(oregano, thyme and cayenne pepper), as well as a T of prepared mustard and two T of mayo. My very picky father and refined husband loved them. Leftovers were great on a bun w/ melted cheese.
