Chickpea Curry
This makes the kitchen smell like an Indian restaurant. While the onion is cooking, I measure out all the spices into a small bowl to add all at once. I use crushed ginger root and ground cinnamon and add a can of petite diced tomatoes. Also I drain the bean juice and sub in water. This is a simple cheap meal and once you have all the spices together it is easy to make.

Zucchini Pie
Like others, I'm trying new recipes to use the garden zucchini. This is one of my favorites. I added chopped green pepper, extra shredded zucchini and some fresh basil. Baked it in a 9x9 square pan a little longer than the recipe stated, probably due to my added ingredients. Excellent and easily adaptable! Thanks!

Annie's Fruit Salsa and Cinnamon Chips
Over 2000 five star reviews and very well deserved! I'm adding mine-this is absolutely excellent. I used melted butter instead of spray (personal preference) on the chips, which are delicious warm just out of the oven.We couldn't stop eating this at home, but did make it to the party it was intended for. The little bit of leftover salsa was very yummy on french toast. Thanks for this great recipe!
