Ham And Swiss Quiche

Oooo...the thyme is a nice touch! I used half-n-half in place of the evaporated milk for no other reason than it's what I've used for quiche in the past and it's what I had on hand. Came out perfect.

Easy Pizza Sauce I

I used Whole Foods organic tomato paste and...yum! Great fresh flavor with a nice blend of herbs. I agree that a little less olive oil wouldn't hurt. I did sauté the garlic in a little bit of olive oil until the aroma was released and then I added the ingredients directly to the same pot to heat through before spreading on crust. Topped with organic mozzarella, arugula, gorgonzola and grated parmesan. A big hit with my husband.

Just so-so, though my hopes were high. The marinade didn't seemed balanced. The flavor of the balsamic vinegar was overly dominate.

Sauteed Garlic Asparagus

Quick, easy and flavorful. I followed the recipe cooking for 10 minutes and the texture was perfect. Asparagus loses its integrity if stored too long, so make sure it's fresh for best results. Store in refrigerator cut ends in a cup of water, or wrap in a wet paper towel and use within 2 days of purchase. Photo available on my profile page.

Egg in a Boat

These are just fun. My suggestions: add the egg just after you flip the bread to toast the second side - also lower the heat and increase the cooking time so your egg cooks more thoroughly and your toast doesn't burn. You can use fun cookie cutter shapes ... hearts for Valentine's Day, stars for the Fourth of July ... and don't discard the cutouts. Instead toast them in the pan and top with your favorite preserves. Photo available on my profile page.

Cottage Cheese Chicken Enchiladas

These are very tasty however they fell apart a bit once it was time to plate them. The prepared chicken filling alone would be excellent in tacos! Make the extra prep work worth your time and double the recipe - these freeze very well and are a quick after work dinner solution. Photo available on my profile page.

Easy Baked Tilapia

So easy! Tilapia is very mild and this recipe really infuses it with garlic and lemon flavor. The veggies really pick up the flavor as well. Super inexpensive to make and very flavorul and healthy. Fresh minced garlic makes a big difference and I recommend drizzling some lemon juice over the fish and veggies. This dish has become a frequent favorite in my home. Crescent-Wrapped Brie

This takes a little practice in getting the seams in the dough sealed, but wow was it worth it. This has lovely presentation and is delicious with whole cranberry sauce served on the side. This pairs perfectly with a cabernet sauvignon.

Prosciutto Wrapped Asparagus

I love impressive and easy recipes! I made this for a food & wine tasting and even my guests who dislike asparagus raved about it. I used provolone instead of the neufchatel and it was delicious, but ran short for the last few and substituted with cream cheese. I served it with store bought pesto sauce. Yum, yum, yum. Even good cold. Pairs very well with Pinot Noir.

Spinach and Sun-Dried Tomato Pasta

One of my favorites ... very simple to prepare and tasty! I omit the pine nuts as a personal preference, substitute dehydrated tomatoes with julienne cut sun-dried tomatoes packed in oil, no need to presoak them and adds great texture and flavor, and drizzle additional olive oil as the final step to moisten the pasta a bit. Serve with garlic bread and a glass of wine ... sophisticated simplicity. Prepare to impress! Photo available on my profile page.
