I love to play pool, go 4 wheeling, go out with friends, and watch football. I go to school part time, work at an Architecture/Engineering firm during the day, play in 2 pool leagues on weekends. I love watching the Food Network and love to cook, although I find it difficult at times because I live alone. It's tough to cook for one person!
My favorite things to cook
I love quick and easy recipes, because I'm always on the go. I have my times where I really try to eat healthy, and my times where I splurge. If I had it my way, I'd live on a diet of meat, potatoes, and carbs. Unfortunately, that's not very waistline-friendly.

Country Apple Dumplings
Holy moly, are these good! I found this recipe, and forwarded it to a friend in the office who likes to cook. I haven't made them yet, but he made them last night and brought me one today. I cannot believe how delicious these are for such a simple recipe. I can't wait to make them myself!

Fried Pork Chop
These were great. My husband and I loved them, and I can't wait to get home and eat what's left! I did season the chops with garlic salt and onion powder before breading. And I followed a suggestion and let them sit in the fridge with the (double) coating on. When I went to put them in the frying pan, some of the batter stuck to the plate and not to the chop. Next time, I will just put them directly into the pan and skip that suggestion. I served them with scalloped potatoes and vegetables in cheese sauce. YUM!

Tacos in Pasta Shells
Hubby and I loved this. We even forgot to put sour cream on top, which we also like. But they were good without. I was liberal with the cream cheese... I'd say I used at least 4 ounces if not a little more. Will be making these again!
