Emily's Famous Hash Browns

In making a double batch, I added about 1/2 cup finely diced green pepper to the ingredients listed. I also sprinkled both sides with paprika. For best results, go easy on the oil - it cooks and browns perfectly with just a little.

Sweet Russian Cabbage Soup

Really, really good meal. I doubled the diced tomatoes, used only 1/8 cup brown sugar, 1/4 cup balsamic vinegar, 1 cup brown rice, an extra bouillon cube, and only 1/2 tsp salt. I also used 1 lb ground beef and 1/2 lb pork sausage which I browned and drained first. I am going to have to try this with venison, as other reviewers have.

Black Beans and Rice

Makes a nice side dish. I used brown rice, chicken broth instead of vegetable broth, 1 sweet and 1 hot pepper sauteed, and I added a can of diced tomatoes. I cut way back on the cayenne pepper because of the addition of a hot pepper.

Venison Bacon Burgers

This recipe makes a very good burger. I did not have shallots on hand so I used onion, otherwise stuck pretty close to the recipe. It helps to keep the burgers held together if frozen first. Also, a well oiled grate and cooking at a lower temperature for a longer period of time works well. For best results, never cook venison beyond medium rare.

Spinach and Feta Pita Bake

Wow, these were good! I used home-made regular pesto on whole wheat pitas. Along with the items suggested in the recipe, I also topped with artichoke hearts, fresh oregano leaves and Hungarian wax pepper slices. Oh, and I cooked mine on the grill.

Italian Chicken Skillet

Not bad. I added a zucchini and a yellow squash, and I used more garlic. From my herb garden I added some fresh basil, thyme, savory, and oregano. Even with these herbs, the dish tasted lightly seasoned. I cooked the noodles partially before adding to this dish. Some spiciness is called for, I think. Next time I will add a hot pepper to the mix.

Delicious Black Bean Burritos

I made a triple recipe and customized it based on my tastes. Along with the base ingredients, I added about a cup and a half of cooked rice, a couple cups of salsa, and chili powder and cumin. Thinking that this was looking like a pretty healthy meal, I decided to omit the cream cheese and instead added just a little shredded cheddar to the whole wheat wraps I used. I also was able to cut way down on the salt. A triple recipe prepared this way made enough to feed my neighborhood, but it turned out excellent.

Easy Vodka Sauce

This is a very nice sauce. I used about 3/4 olive oil to 1/4 butter mixture instead of just butter. Also,I sauteed about 4 finely minced cloves of garlic with the onions (after the onions started to get translucent). With the tomatoes was added a couple teaspoons each of dried basil and oregano and a handful of chopped fresh parsley. Seafood goes particularly well with this sauce, so on the side I sauteed 1 lb of shrimp and 1 lb of scallops in butter/olive oil and garlic. Added on top of the noodles, then covered with sauce...very addictive.

Angel Chicken Pasta

I liked this dish better than my family did, but overall it was just OK. The sauce tasted pretty good, but cooking the chicken this way leaves it rather bland, both in taste as well as texture. Perhaps browning the chicken first, or not cooking it at all in the sauce, would improve this dish. Adding a steamed vegetable, like broccoli, at the end improves it as well.

Shrimp Fettucine Alfredo

About as easy as it gets...I doubled the sauce ingredients because of my family's preference for sauce dishes and used about a cup and a half of Parmesan. Since I was using pre-cooked shrimp, they were not added until nearly the end. A good base sauce, it certainly lends itself for experimenting with different types and amounts of seafood, cheeses and/or vegetables.

Easy Tilapia with Wine and Tomatoes

Not bad at all. Next time I will try some lemon juice and parsley and I will cook it on the stove. The foil packets are more trouble than they are worth given that all you are doing is steaming. The left-overs were really great.

D's Famous Salsa

This recipe is closest to the base I use, so I decided to share my changes and ratings here. First, I can my own tomatoes, so I simply use a quart of those (if you have a quart that didn't seal properly, then you have an immediate volunteer!) - but best to drain first. Next, I use 4-5 cloves of garlic, 1 jalapeño pepper, 1 Hungarian hot wax pepper, 1 tbl red wine vinegar, 1/2 of a red onion chopped, 1/3 cup fresh chopped cilantro, 1/2 lemon juiced and about 1/2 tsp salt. In less than 10 minutes, you have the best tasting salsa ever!

Black Beans and Rice

This turned out to be a much tastier dish than I anticipated. The simple modifications I made put this over the top. I used a heaping 1/3 cup of salsa in place of the tomato sauce, added about 1 tsp or so of cumin, and salt to taste. I also used chicken stock in preparing the rice.

Garlic Chicken

These turned out extremely moist and flavorful. For some reason I needed twice the breadcrumb & cheese mix, but the breasts were rather large. I added fresh ground pepper to the mix as well as 1 tsp basil and 1 tsp oregano. Five minutes before they were done, I covered with shredded mozzarella cheese and continued to bake until well melted. This was served over a bed of spaghetti and topped with a garlic-marinara sauce. I have found that lightly greasing or using cooking spray on the baking dish ensures that clean up is a snap!

Indian Chicken Curry II

This turned out really well. I was somewhat concerned because of some reviews that described this dish as being bland. I did the dry-pot spice roasting suggestion, and if you try this be warned about the smoke and the strong odor. I used half of the cinnamon, half of the lemon, and more ginger and curry. Otherwise I stuck to the recipe. I cooked it for an hour which I think helped a lot. I made a double recipe for 5 people.

Baked Garlic Parmesan Chicken

I made a tomato sauce style Chicken Parm and used this recipe to prepare the chicken. I used both breasts and thighs (pounded thin), and the thighs turned out the best. I needed more of the garlic-oil than the recipe called for and used oregano along with the basil in the bread crumb mix. My family wants this again soon.

Simple Tuna Melt

Very good. I liked the idea that this recipe had of using Dijon mustard and vinegar, which is why I am reviewing this particular version of this classic. My preference is to add a little more mayo than this calls for, minced celery and minced onion, a dash of cayenne pepper, and no salt. A couple slices of tomato and lettuce are wonderful with this as well, and served on a hoagie roll.

Restaurant Style Mac and Cheese

Very good, the family didn't turn their noses up at this as they do with most Mac and Cheese recipes. I made this according to the recipe except that I doubled the cream.
