Yummy Sweet Potato Casserole

Very tasty, especially the topping. Per others suggestions I baked the potatoes (which compliments their sweetness) in foil in the oven for 1.5 hrs at 325 degrees along side my turkey. Then I mashed, mixed with the other ingredients, and blended with my hand mixer to make them ultra smooth. The only change I made was to use only 1 egg instead of 2. Awesome - will make again.

Strawberry Sensation Smoothie

Kids loved! I made 2 servings by substituting 1 cup of orange juice for the orange and used a 6 ounce container of strawberry yogurt, blended with some ice. Tasty and healthy - yay!

Apple Cake V

Awesome! I took the suggestions of others and only used 3/4 cup of oil and 1/2 cup of applesauce - this worked fine. I used a combo of granny smith and macintosh apples and added about 1 t. of cinnamon on top. I poked fork holes in the cake and added the warm glaze to the top so that some of the glaze seeped into the cake. The glaze really is what sets this cake apart from others. Good enough to serve for the holidays.

Sock it to Me Cake II

Do not bake 50 minutes, I did 40 and this was more than enough. I only added 1/4 cup of sugar to the cake mix and I felt this was plenty. The cake had a nice flavor but was dry. I opted to skip the icing recipe because I could not bring myself to add a stick of butter to an already 'fatty' cake. Instead I used 1 cup of confectionary mixed with 2T of milk and a touch of vanilla. I'm sure the recipe would be less dry with the listed icing.

The Best Meatloaf I've Ever Made

A bit on the bland side but not bad if you are not looking for an overpowering dish. My meatloaf kind of feel apart. I used crumbled italian bread and probably would of had a denser meatloaf if I used a denser breadcrumb such as a country style bread or dinner roll. I will try it this way next time to see if I am more successful. Also, don't add any milk, it will work against you.

Cottage Cheese Chicken Enchiladas

I took the easy way again and used diced Perdue shortcuts chicken (I love the ease of this stuff). I mixed with the sauted onions and chili peppers as the recipe stated. I would say NOT to add salt to the cottage cheese mixture because anything made with taco seasoning is always going to be extra salty. I used flour tortillas in error but they were fine also. I only managed to get 6 large enchiladas with this amount of stuffing. Will make again.

Gourmet Chicken Pizza

Wow, a great flavor combo. I used slightly less than a 1/2 cup of ranch because it has such a powerful taste. I made a few substitutions and made the pizza even quicker - diced Perdue shortcuts chicken, canned, diced & well drained tomatoes mixed with a bit of crushed garlic and I added precooked (real) bacon bits. I will be making this often.

Blueberry Snow

I decided to make this recipe because I had a can of blueberry pie filling left in the cabinet that I wanted to use. It ended up being a very good & light dessert. I only used 12 oz of cool whip as others had suggested and I cut the milk to 1/2 cup because I thought a full cup would be too much. I think this recipe would be great with strawberry or cherry pie filling as well. Definitely a redo.

Lemon Pie Bars

I made the recipe exactly as stated. I used the juice of 2 lemons to make the 1/2 cup of lemon juice required. I found them to be very lemony and sweet at the same time. Although my husband and I enjoyed the kids were not interested.

Mini Cheesecakes

An awesome dessert option. I didn't use the vanilla wafer, it appeared to small to cover the bottom of the muffin pan. Instead I substituted crushed graham cracker with melted butter for the crust. I doubled the recipe, but there is no need to double the cherry topping; 1 can is plenty. Also, I found that to only fill the muffin tin 2/3 full made for skimpy (cookie height) minis. Next time I will fill to the top of the liner for better presentation. I did bake in a water bath and had no cracking.

Anna's Chocolate Chip Cookies

4 1/2 stars actually. I baked at 350 degrees for 12-14 minutes so the cookies wouldn't be too dry, the rest was all as the recipe stated. The reason for the 4 1/2 stars is I once made a recipe which called for butter-flavored Crisco instead of butter (Geez, I need to find that recipe back). Now those were absolute perfection by which I now rate all cookies going forward.

Easy Pineapple Cake

Agreed, DO NOT bake 45 minutes, 30 is plenty in a 13x9 pan. I only used 1.5 cups of sugar per others suggestions and this was fine. The consistency of the cake is a bit spongy, I guess due to the lack of oil/baking soda. However, we still did enjoy the taste, although not overly pineapply. I think I will add some pineapple extract next time. I substituted low fat cream cheese for full fat and next time will only add a 1/4 cup of butter to the frosting. 'Cream cheese frosting 2' from this site uses this ratio and it works fine. A nice lower fat dessert with these modifications.

Broccoli Hamburger Casserole

This recipe as written is definitely lacking and only 2 stars to me. I used cream mushroom soup since in house. I also layered over noodles tossed with parmesan, garlic powder and butter, then added the cheese to top layer. This was all in an attempt to salvage this very bland recipe. My end result was kind of like hamburger helper. It was better the next day as a leftover after the flavors blended, but not a redo.

Chocolate Chip Cookie Pizza

I found that I needed more than an 18 oz. of cookie dough to cover an 12" pan. Luckily I purchased the 36 oz and I used about 3/4 of the roll. The cookie part ended up being dry (guess I could blame it on Pillsbury) and I wish I had made the dough from scratch. I found that I couldn't taste the cream cheese mixture at all, and the pudding topping kind of overpowered the whole thing. It was better the next day after the flavors blended a bit more. Next time I will stick with the Toll House recipe and just make the pizza without toppings.

Mini OREO Surprise Cupcakes

Simple and tasty. I used about 1 T. of the cream cheese mix (instead of 1/2) and there was plenty of mixture to handle this amount. I made sure when I topped off with the remaining batter that all of the cream cheese mixture was covered so that nothing oozed out. I did use canned (gasp) frosting on top because they needed to travel to a school event and I didn't think the cool whip would hold up. I think I prefer them with frosting over the cool whip anyway. A hit with the kids.

Cheesy Hash Brown Bake

I served this for dinner along with grilled chicken and shrimp instead of as a brunch side dish. This recipe can be served either way. Very simply to throw together, I always like that. I used 1 can cream of potato and 1 can of cheddar cheese soup. Reduced the sour cream to 1 cup and the parmesan to a 1/2 cup (the calories were adding up) but used the full amt of cheddar. I also added a dash of onion powder and pepper too. Kids loved!
