About this Cook
I always enjoyed cooking and baking and have been doing so since I was about 8 years old. I usually am the main cook behind all our family gatherings. Quick meals are usually my day to day preference with 2 young girls. Unfortunately my time spent in the kitchen needs to be limited.
My favorite things to cook
I usually stick with quick and easy kid friendly meals. My goal is to tweak recipes to keep them healthy and lower and fat. The exception would be celebrations and Holidays when there are no rules and the richer the better!
My favorite family cooking traditions
I grew up in a meat and potato household but by far my cooking preference is Italian - it simply is the tastiest.

Easy Pineapple Cake
Agreed, DO NOT bake 45 minutes, 30 is plenty in a 13x9 pan. I only used 1.5 cups of sugar per others suggestions and this was fine. The consistency of the cake is a bit spongy, I guess due to the lack of oil/baking soda. However, we still did enjoy the taste, although not overly pineapply. I think I will add some pineapple extract next time. I substituted low fat cream cheese for full fat and next time will only add a 1/4 cup of butter to the frosting. 'Cream cheese frosting 2' from this site uses this ratio and it works fine. A nice lower fat dessert with these modifications.

Balsamic Roasted Pork Loin
So simple. Marinated for 24 hrs. I used 2 one pound tenderloins. Grilled outside. Tender and flavorful.

Broccoli Hamburger Casserole
This recipe as written is definitely lacking and only 2 stars to me. I used cream mushroom soup since in house. I also layered over noodles tossed with parmesan, garlic powder and butter, then added the cheese to top layer. This was all in an attempt to salvage this very bland recipe. My end result was kind of like hamburger helper. It was better the next day as a leftover after the flavors blended, but not a redo.
